Potato-Spinach Puff |

Ingredients:
- 2 1/2 cups hot mashed potatoes
- 1 1/2 cup raw spinach
- 1 tsp. salt
- 4 tbsp. butter
- dash pepper and paprika
- 4 eggs, separated
Directions:
Combine all except eggs. Blend in 4 egg yolks. Beat 4 whites until stiff and then fold into mixture.
Pile lightly into a greased 1 1/2 qt. casserole.
Bake 375 until puffed and golden, about 40 minutes.
