Recipes Using Oatmeal

I know i have read a recipe for baked oatmeal in the newsletter, but now I can't find it. i have been given 2 very large boxes of original oatmeal. The type that takes a while to cook. I figured if I could find the recipe for baked oatmeal that would be a way to use it. Any other ideas for recipes using oatmeal would be greatly appreciated.

Cheap Lunch and Snack Ideas for 4 Kids

I have 2 boys, ages 6 and 8. And, for the summer, I'm now babysitting my neighbor's 2 sons as well; ages 3 and 8.

I've been trying to come up with some ideas to help me stretch my pennies while feeding all these kids. (Breakfast, Lunch, & snacks). I prefer quick and simple foods, but most the time, that's not the cheapest route. Even though I buy everything store brand or even use coupons, it's still way over my budget. There's got to be other things besides corndogs, hotdogs, pizza, chips, little debbies, fruit snacks, etc.

I also would like some ideas for any activities for us during the day to keep them active and structured. (like games, not video games, contests, arts & crafts, projects, etc.)

Thanks in advance for any advice you offer!

Quick and Easy Cinnamon Rolls

Quick and Easy Cinnamon Rolls

Ingredients:

  • 3 Tbsp. margarine or butter
  • 1/4 cup pancake syrup
  • 1/4 cup packed brown sugar
  • 1/4 cup chopped nuts
  • 1/4 cup raisins (optional)
  • 1/4 tsp. cinnamon
  • 1 tube refrigerator biscuits

Directions:

Preheat oven to 400 degrees. In 9x1 inch round baking pan melt margarine in oven. Remove; stir in next 5 ingredients. Arrange biscuits in syrup mixture. Bake 15 minutes or until biscuits are well browned. let stand in pan 5 minutes. Invert onto serving plate. Makes 10 servings.

Easy Cinnamon Rolls

Ingredients

  • 1 loaf frozen bread dough
  • 1/4 cup butter
  • 2 Tablespoons cinnamon
  • 1 small apple, chopped
  • 1 cup raisins (optional)
  • 1/2 cups pecans, chopped

Directions

Thaw dough and roll out into a rectangle. put on all the goodies. roll it up and cut into 1 inch slices Bake 350 for 25 to 25 minutes

Pizza Casserole

Pizza Casserole I

Ingredients:

  • 1 lb. hamburger (browned with a little onion)
  • 1 jar pizza sauce
  • 2 cups uncooked wide noodles
  • 1/2 cup water
  • 1/2 cup sliced mushrooms
  • 1 pkg. pepperoni or Canadian bacon

Directions:

Mix first 5 ingredients together and put in a greased 9x13 inch pan. Arrange pepperoni slices on top and sprinkle with 1 cup or more mozzarella cheese. Bake for 25 minutes at 350 degrees.

Easy and Inexpensive Pizza Casserole

This was always my Mom's favorite quick supper. She was a teacher who often didn't have alot of time after school to plan a meal for the five of us. We all loved it! It is a quick and easy supper for 4-5 people. It requires only 4 ingredients and they are staples that almost everyone always has on hand. It "seasons" itself and really does taste like pizza. Serve with a tossed salad for a healthy full meal!

  • 1 1/2 Lb. Hamburger
  • 1-2 sleeves Saltines
  • 2 cans Tomato Soup
  • 24 slices Cheese

Brown hamburger. In square pan layer in following order; 1/4 hamburger, cover with saltines, cover with sliced cheese, cover with 1/2 can tomato soup (undiluted. Repeat layers ending with tomato soup. Bake in 350 degree oven for 30 minutes . Let sit for 5 minutes. Cut in squares and serve.

Pizza Casserole II

(A flexible recipe)

Ingredients

  • 2 cups pasta (any kind)
  • 2 pounds burger and/or sausage and onion
  • 1 pint pizza sauce
  • 1 can cream soup (any kind)
  • 2 cups mozzarella cheese

Directions

Cook pasta, fry meat and onion, then add all but the cheese and mix.

Put 1/2 mixed ingredients in a baking dish, add 1/2 of the cheese, then the rest of the mix and top with the remaining cheese.

Bake at 350 degrees for 30 min.

Candy Brownie Pizza

Ingredients

  • 1 pkg. Pillsbury Fudge Brownie Mix
  • 2 Tbsp. flour
  • 1/3 cup water
  • 1/4 cup oil
  • 1 egg
  • 1 cup miniature marshmallows
  • 1/2 cup candy coated chocolate M&M pieces
  • 1/2 cup caramel ice cream topping

Directions

Heat oven to 350 degrees. Combine brownie mix, flour, water, oil and egg; beat 50 strokes by hand. Place parchment paper on 15 inch baking stone. Pour brownie mixture on paper and spread into a 14 inch circle. Bake for 15 to 20 minutes. Do not overbake. Immediately sprinkle with marshmallows, candy coated M&M's. Cool for 20 minutes. Drizzle with ice cream topping. Cool completely. Cut into squares to serve. Makes 16 servings.

Chocolate - Ice Cream - Pudding Dessert

Ingredients

  • 1 cup soda crackers (crushed)
  • 1 cup graham crackers (crushed)
  • 1 stick margarine
  • 2 pkgs. instant vanilla pudding
  • 2 cup milk
  • 1 qt. ice cream (softened)
  • Cool Whip
  • 1 or 2 Hershey's chocolate bars

Directions

Melt margarine and mix with crumbs. Press into 9x13 inch cake pan. Blend milk with pudding until it starts to set. Blend in softened ice cream. Mixture will be thick and start to set soon. Pour into crust. Refrigerate 1 hour. Cover with Cool Whip and shred chocolate bars over top. Very good; a light dessert and kids love it.

French Dip Sandwiches

Ingredients

  • 5 pound RUMP roast
  • 1 to 2 tsp. seasoning salt (your favorite)
  • 1/2 tsp. oregano
  • 2 beef bouillon cubes
  • 1 to 2 cans onion soup or beef broth and water if condensed
  • 1 Tbsp. garlic powder
  • 1/4 tsp. cayenne pepper
  • 1 finely chopped onion
Directions

Put all in slow cooker on slow 8 to 10 hours, or high 4 to 6 hours.

Slice thin and use french rolls. The juice is served in small bowls.

Spiced Cranberry Raspberry Sorbet

Ingredients

  • 1 1/2 cup fresh or frozen cranberries
  • 3/4 cup sugar
  • 1/8 tsp. allspice
  • 2 1/2 cup water
  • 1 1/2 cup frozen raspberries without syrup

Directions

In a medium saucepan, combine cranberries, sugar, allspice and water. Bring to a boil; boil 10 minutes, stirring occasionally. Remove from heat, stir in raspberries. Cool 10 minutes. Place 1/2 of mixture in food processor bowl with metal blade or blender container; process until smooth. Strain to remove seeds. Repeat with remaining mixture. Pour into ungreased 8 or 9 inch pan. Cover; freeze 2 hours, stirring occasionally. Freeze until firm about 2 hours longer. let stand at room temperature 15-20 minutes before serving. Makes 8 servings.

Restaurant Style Green Salsa

Adjust to suit your taste.

Ingredients

  • 7 tomatillos
  • 1 red tomato
  • 2 or 3 jalapenos peppers
  • 1 clove garlic (red skinned is the best)
  • 1 slice onion

Add later:

  • Lemon
  • Salt

Directions

Boil ingredients, then blend in blender.

Add lemon and salt to taste.

Rocky Road Freeze

Ingredients

  • 1 can sweetened condensed milk
  • 1/2 cup chocolate syrup
  • 2 cup whipping cream
  • 1 cup miniature marshmallows
  • 1/2 cup miniature chocolate chips
  • 1/2 cup salted peanuts (chopped)

Directions

In a small bowl, combine the milk and chocolate syrup; set aside. In a mixing bowl, beat cream until stiff peaks form. Fold in chocolate mixture, marshmallows, chocolate chips and peanuts. Transfer to a freezer-proof container; cover and freeze for 5 hours or until firm. Remove from freezer 10 minutes before serving.
