Meat Loaf

Ingredients:

  • 1 1/2 lbs. hamburger meat
  • 3/4 cup uncooked oatmeal
  • 1/4 cup chopped onion
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • Ad
  • 1 can tomato soup
  • 1 beaten egg

Directions:

Combine all ingredients. Bake at 350 degrees F. for 1 hour and 15 minutes. Let stand a few minutes before serving.

I've always put oatmeal in my meatloaf. It makes the meatloaf nice and hearty, and is a great binder.

Super easy and tasty!

Ingredients:

  • 1 1/2 lb. ground beef
  • 2 eggs
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 cup cracker crumbs, rolled fine
  • Ad
  • 1 Tbsp. instant minced onion
  • 3/4-1 cup milk and ketchup (combined)
Glaze:
  • 3 Tbsp. brown sugar
  • 1/3 cup ketchup
  • 1/2 tsp. mustard

Directions:

Beat eggs. Add ground beef, salt, pepper, crumbs, and minced onion. Mix thoroughly. Stir in liquid as needed to obtain the right consistency to shape into loaves. Place in greased baking pan. Pour water around loaves. Cover and bake at 375 degrees F for 1 hour.

Remove from oven. Glaze with brown sugar, ketchup, and mustard blended together. Bake, uncovered, until glaze bubbles, about 15-20 minutes.

Servings: 6-8
Prep Time: 15-20 Minutes
Cooking Time: 75-80 Minutes

I don't understand the "Pour water around loaves." What water? Is this to turn the pan into something like you would use for custard, where you set the ramekins into a large pan and pour water in til it's half way up the ramekin?

Robin, this is the recipe I have used for over 20 years. Got it from the Coffee Cup Cookbook (formerly in Olds, IA) My husband says it is the best meatloaf in the world. Sometimes I mix in a little shredded cheddar cheese. It is moist, yet doesn't fall apart. Seems it may be an old Mennonite recipe? Little_Nana3 I usually shape into two loaves and put them side-by-side in a 9x13 pan, not touching each other or the sides of the pan, and then pour a little water in the bottom of the pan. This keeps it from getting too brown around the edges and bottom of your pan. Easy to clean up!

Ingredients:

  • 1 1/2 lbs. ground beef
  • 1 cup seasoned stuffing mix
  • 1 can tomato sauce (8oz.)
  • 1 egg
  • 1 tsp. salt
  • 1 Tbsp. Worcestershire sauce
Topping:
  • 3 Tbsp. brown sugar
  • 1 tsp. mustard
  • 1/4 cup ketchup

Directions:

Combine all meat loaf ingredients and shape into loaf. Place in baking dish. Then combine topping ingredients and spread over loaf. Bake 1 hour in 350 degree F oven. Pour excess grease off before serving.

  • 3 slices soft bread (broken into small pieces)
  • 3 Tbsp. ketchup
  • 1 Tbsp. soy sauce
  • 1 small onion, finely chopped
  • 1/2 cup finely chopped celery
  • 1/4 tsp. salt
  • 1/2 tsp. pepper

Directions:

Combine all ingredients in a bowl; put in loaf pan. Bake at 350 degrees F for 1 hour.
