Wow Wee Broccoli Casserole

This is a family favorite borrowed from my sister-in-law.

Ingredients

  • 2 packages of frozen broccoli-chopped
  • 1 cup mayo
  • 1 can of cream of celery soup (can use mushroom or whatever)
  • 2 Tbsp. minced onion
  • 2 cups shredded cheese
  • 2 eggs
  • 1 cup Ritz crackers

Directions

Cook the broccoli according to package directions. Drain; Add onion, mayo, soup, cheese and eggs. Mix together thoroughly. Place in a buttered pan and top with Ritz crackers. Cook on 400 degrees F for 20-30 mins.

I use the same amount of ingredients and put it in a 9x13 inch baking dish. It is a great casserole and is gobbled up everytime I fix it.

Another idea for this great recipe is to add chicken. My mother makes it and it's to die for.

Michele, that sounds delicious; however sounds like too much for my family of 4....do you suppose I could cut the recipe in half. If so, then should I reduce the cooking time?
