I am looking for a dessert my mother used to make many years ago. I don't know the name, but it has a graham cracker crust and cream cheese, crushed pineapple and I believe it had eggs also. Does anyone have a recipe? Thanks so much!

Honey Ice Cream (Homemade)
Ingredients
- 4 cups milk, divided
- 1 cup honey
- 1/4 tsp. salt
- 6 eggs
- 2 Tbsp. vanilla
- 4 cups heavy cream
Directions
Heat 2 cups milk with honey and salt until honey is dissolved. Beat together eggs, remaining milk, vanilla, and cream. Add honey mixture; cool. Pour into ice-cream maker and freeze according to manufacturer's directions.

Rhubarb-Honey Ice Cream Sauce
Ingredients
- 4 cups diced rhubarb
- 1 cup honey
- dash salt
Directions
Combine all ingredients in a heavy saucepan over medium low heat. Cook about 5 minutes, covered, then remove cover and cook until sauce is the desired consistency.

Rose Petal Rolls
Ingredients
- 1 packet yeast
- 2 cups warm water
- 1/3 cup sugar
- 3/4 cup solid shortening
- 1 egg
- 4 cups self rising flour
Directions
Dissolve yeast in warm water and stir in sugar. Beat in other ingredients. Fill muffin pans only 1/2 full. Let rise a few minutes. Bake at 400 degrees F for 10 minutes or till golden brown. Better rolls if dough is chilled. Dough keeps in refrigerator for several days.

Mexican Breakfast Scramble
Ingredients
- 6-8 corn tortillas cut into small squares
- 6-8 oz. your favorite salsa
- 4-6 eggs
- Vegetable oil 2 Tbsp. or so
- optional cheese
Directions
Place corn tortillas into hot oil in fry pan, stir.
Then while tortillas are still soft, add eggs and salsa.
Some do add sprinkle of parmesan cheese or some shredded cheese to this
It's a quick breakfast for all and tasty.

Elliecat's Casserole
Directions
This is one of those use-your-own-judgment recipes depending on the size of the family you have to feed. It's simple, delicious, particularly winter warming and a favorite with my family.
You will need a deep casserole dish, and potatoes, onions and bacon.
Grease the casserole dish, wash peel and slice the potatoes and onions. Cut the bacon into strips. Layer the ingredients into the casserole dish starting with the potatoes, then onion, then bacon finishing with the top layer being potato. Made a basic white sauce, a thick one is best, Pour the white sauce into the casserole so that the ingredients are well covered.
Salt and pepper to taste. Put lid on dish and cook in a moderate oven till the potatoes/onion are tender and well cooked.
You can serve with a side of green vegetable, peas, beans, etc. if you like but it is particularly filling and satisfying just on its own.

Polish Mistakes
Ingredients
- 1 lb. Hamburger
- 1 lb. Sausage (mild)
- 1 tsp. garlic powder
- 1 tsp. oregano
- 1 Tbsp. Worcestershire sauce
- 1 lb. Velvetta cheese, cubed
- party rye bread
Directions
Brown and drain meat mixture well. Add seasonings and cheese. Cook on low until cheese is melted. Spoon on Party rye bread. Bake on cookie sheet sprayed with Pam at 350 degrees F for 15 - 20 minutes or until bread is lightly toasted and meat is bubbly.
May be frozen before baked to use later.

Band Night Ice Cream (Homemade)
Ingredients
- 6 eggs
- 2 1/4 cups sugar
- 1 can evaporated milk
- 1/2 pint whipping cream
- 4 tsp. vanilla
- 1/4 tsp. lemon extract
- 2 qts. milk
Directions
Beat together eggs and sugar. Add remaining ingredients and mix well. Pour into ice cream maker and freeze according to manufacturer's directions.
Band Night Ice Cream Chocolate Sauce:
Ingredients
- 2 cups sugar
- 1/2 cup cocoa
- 1/2 stick margarine
- 1 can evaporated milk
- 2 Tbsp. vanilla
Directions
Mix dry ingredients; add margarine and blend over low heat. Add milk and boil 10 minutes. Watch carefully that the mixture does not scorch. Cool. Add vanilla.
