Fritz's Bakery Pineapple Cheesecake Recipe

Making Crunchy Canned Pickles

What do you add to canning pickles to stop them from getting mushy? Also, does anyone have a recipe to can pickles using less salt? Hope someone can help. I canned a batch of pickles last year following a recipe. The taste was great, but they were all mushy inside.

Recipes Using Fava Beans

I got some fresh fava beans in my organics box this week and I have no idea what to do with them. I know they have to be shelled and skinned, which sounds like a bit of work. I was wondering if anyone had any personal recipes or advice for working with fava beans? Thanks!

Breakfast Sausage Patties

Have you made sausages with a food processor? I made some chicken and pork sausages. I used half chicken and half pork. Cut meat off bones into small pieces about 1 inch square, put 1/2 cup water on biscuits to make them soft. Mash them up with hands or potato masher. Put all in a large bowl. Sprinkle the seasoning over it.

Put a 1/2 cup at a time in the processor. Pulse it until ground fine as sausage meat. Empty it in another large bowl. Keep doing this till you have ground all the meat. Mix well. Make one patty and fry it then taste it to see if it's like you like it,if not add more seasoning.

Ingredients

  • 1-lb. ground pork
  • 1 lb. ground chicken
  • 4 tsp. ground sage
  • 2 tsp. salt
  • 2 tsp. freshly ground black pepper
  • 3 cold biscuits
  • 1/2 cup water

Directions

Combine all, wet hands to keep the meat from sticking to hands. Form into 1/4 inch thick patties. Fry in a large skillet over medium high heat for 3 minutes on each side, or until done. Will make 10-12 patties that are round and thick.

You can freeze the meat as is or make into patties and freeze,put wax paper in between each patty. I use ziplock freezer bags.

Saving Money on Pudding

I mix instant chocolate pudding mix with a mixture of milk and leftover coffee for a mocha flavor, and mix lemon pudding with a mixture of milk and water for a more lemony flavor. Both save calories and fat, are thrifty and improve the taste of pudding.

Making a Cake Without Eggs or Oil?

The other night I had a boxed spice cake mix but no oil or eggs. My cupboards were pretty bare. The box called for 1/3 cup oil and 3 eggs. I had some mayonnaise and used 1 cup of it, 1/2 tsp of baking powder and about a Tbsp of sugar. I baked it for the same length of time recommended on the box. The cake turned out amazingly well and I'd definitely do this again in a pinch.

Lemonade Chicken

I like this because you can cook it in your crockpot and not worry about it till you are ready to make the gravy. The lemonade tenderizes the chicken and gives it a delicious flavor.

Ingredients:

  • 2 boneless skinless chicken breasts
  • 1 small can of frozen lemonade, thawed
  • 2 Tbsp. brown sugar
  • 2 Tbsp. ketchup
  • 1 Tbsp. vinegar
  • 1 Tbsp. cornstarch
  • 1 Tbsp. cold water
  • hot cooked rice

Directions:

Arrange chicken pieces in crock pot. Combine lemonade, brown sugar, vinegar and ketchup. Pour over chicken. Cover, cook on low for 6 to 8 hours or high 3 to 4 hours. When done, remove chicken from the crock pot. Pour the liquid into a saucepan, skimming the fat; bring to a boil. In a small bowl, combine the cornstarch mixture. Stir until thickened. Pour sauce over chicken and serve with hot rice.

Servings: 2
Time:5 Minutes Preparation Time
6-8 or 3-4 Hours Cooking Time

Rhubarb Crisp

Ingredients:

  • 8 cups sliced fresh rhubarb (could use 2 16 oz. packages of frozen)
  • 1 cup sugar
  • 1 3-oz. package raspberry flavored gelatin
  • 2/3 cup all purpose flour
  • 2/3 cup rolled oats
  • 1/2 cup brown sugar
  • 1 tsp. ground cinnamon
  • 3 Tbsp. cooking oil
  • vanilla frozen yogurt (optional)

Directions:

Spread the rhubarb in a 2 quart rectangular baking dish. Sprinkle evenly with sugar and raspberry gelatin. Set aside. In a medium bowl, stir together flour, oats, brown sugar, and cinnamon. Add oil and stir until mixture is moistened and crumbly. Sprinkle oat mixture over fruit. Bake uncovered at 375 degrees F for 50 minutes (if using frozen rhubarb bake 60 minutes) until topping is slightly brown. Serve warm topped with frozen yogurt. 8 Servings.

Parmesan Cauliflower Casserole

Tasty substituted with asparagus or broccoli, too ;-)

Ingredients:

  • 1 cauliflower, separate into florets (no stems) and slice 1/4 inch thick
  • 3 Tbsp. butter, cut in thin slices
  • 1/2 cup Parmesan, shredded
  • salt and pepper to taste

Directions:

Preheat the oven to 425 degrees F. Butter an 8x10 inch baking dish. In a large pot, boil cauliflower until crisp but tender. Drain.

Lightly pack cauliflower in baking dish. Season with salt and pepper. Dot with butter. Sprinkle with the cheese. Bake uncovered about 30 minutes or until lightly browned on top.

White Bean Chili

This main dish soup, besides being delicious, is quick, and easy to make.

Ingredients:

  • 2 lbs. cubed skinless chicken breast
  • 2 Tbsp. olive oil
  • 1 bag frozen seasoning mix (onions, bell pepper, celery)
  • 1-2 Tbsp. minced garlic
  • 2 tsp. cumin
  • 2 cans chicken broth
  • 4 cans Northern White beans
  • 16 oz. Pace Picante Sauce (mild)
  • tortilla chips
  • Pepper Jack cheese (grated)

Directions:

In a large pot brown the chicken in olive oil. Add minced garlic, and seasoning packets. Add the beans, chicken broth, cumin, and picante sauce.

Cook thoroughly until chicken is well done stir frequently.

Serve with white tortilla chips, and grated pepper jack cheese. You can also add sour cream if you wish.

Enjoy!

30 Minutes Cooking Time

Puff Puffs (African Doughnuts)

This is a very simple and cheap desert. It takes about 10 minutes to mix and cook the puff puffs, and they are delicious! This is something you can make when you are out of everything, and just want something sweet!

Ingredients

  • 2 1/2 cups self rising flour
  • 2 Tbsp. sugar
  • 1-2 eggs (not really necessary but does make a rich batter)
  • milk (only enough to make a stiff batter. You want it thick as in hushpuppy consistency).
  • cooking oil (enough to deep fry)

Directions

Mix flour, sugar, eggs and milk into a thick batter. (This should be the consistency of hush puppy dough.) Thick enough to hold it's shape in the oil while cooking. These are to be deep fried, so put enough oil in a pan to deep fry them.

Using a small spoon, put a small amount of batter into the hot oil and when golden brown remove from the oil. Strain onto paper towels and then roll into the sugar combination of your choice. I love the powdered sugar!

You can use any, or all, of the listed ingredients below to roll the puff puffs in after they come out of the fryer! These are just a few, try some of your own ideas!

Robin's Recipe Corner:

Zucchini Rounds

Ingredients

  • 1/3 cup Bisquick Mix
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • onion salt or minced onion, to taste
  • 2 slightly beaten eggs
  • 2 cups shredded unpeeled zucchini

Directions

Stir together Bisquick mix, seasonings and cheese. Stir in beaten eggs until mixture is moistened. Fold in zucchini. Shape into 6-8 rounds. Fry in small amount of hot oil, browning on each side. Serves 6-8.

Peanut Coleslaw

Ingredients

  • 2 cups mayonnaise
  • 1/3 cup sugar
  • 1 Tbsp. vinegar
  • 1/4-1/2 cup buttermilk
  • 1/2 cup peanuts
  • 1/2 cup raisins (optional, but very good)
  • whole head cabbage, shredded

Directions

Mix mayonnaise, sugar, vinegar and buttermilk. Pour over the cabbage, peanuts, and raisins, if used, just before serving.

Swedish Meatballs

Ingredients

  • 2 lb. ground beef
  • 1/3 cup parsley flakes
  • 2 Tbsp. soy sauce
  • 1/2 tsp. garlic powder
  • 2 Tbsp. instant minced onion
  • 1 cup cornflake crumbs
  • 2 eggs
  • 1/2 tsp. pepper
  • 1/3 cup ketchup
Sauce:
  • 1 Tbsp. bottled lemon juice
  • 2 Tbsp. dark brown sugar
  • 1 bottle chili sauce (12oz.)
  • 1 lb. can jellied cranberry sauce

Directions

Mix all ingredients and form meatballs. Bake in shallow pan at 350 degrees F for 10-12 minutes until browned and cooked through. Drain. Place in casserole dish and add sauce.

In another pot, cook all ingredients until smooth. Pour over meatballs and bake for 30 minutes.

Golden Parmesan Potatoes

Ingredients

  • 6 large potatoes
  • 1/4 cup flour
  • 1/2 cup grated Parmesan cheese
  • 3/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 cup butter
  • chopped parsley, optional

Directions

Peel potatoes and cut into large bite-size pieces. Combine flour, cheese, salt and pepper in bag. Place a few potatoes in the bag at a time, moisten with water, and shake until coated. Melt butter in 9x13 inch pan.

Place coated potatoes in a single layer and bake at 375 degrees F. for 1 hour. Turn potatoes after 30 minutes. You may sprinkle leftover flour mixture over potatoes before baking. Sprinkle parsley before serving.

Chocolate Lime Swirl Salad

Ingredients

  • 25-30 chocolate Oreo type cookies
  • 3 Tbsp. melted butter
  • 1 pkg. lime gelatin (any other flavor could be used, too)
  • 1/2 cup hot water
  • 1/4 cup sugar
  • 1 sm. Cool Whip
  • 1 cup crushed pineapple

Directions

Crush cookies and mix with butter and place in bottom of pan, saving some for topping. Dissolve gelatin, add pineapple and sugar and let set to partially congeal. Fold in Cool Whip. Pour over layer of cookie crumbs and cover with remaining crumbs. Chill.
