Apricot, Pecan and Pear Pudding

Ingredients:

Topping

  • 2 oz. butter
  • 2 oz. light muscovado sugar
  • 2 oz. pecan nuts (chopped)
  • 4 oz. ready to eat apricots (roughly chopped)
Pudding.
  • 5 oz self raising flour
  • 2 oz. butter (cut into cubes)
  • 2 oz. light brown sugar
  • 1 egg (beaten)
  • 1 pear (grated )
  • 2 fluid oz. of milk

Directions:

Make topping. Lightly mix all ingredients, then spoon into buttered 2 pt pudding basin.

Make pudding. Measure flour into bowl; add butter and rub in until it resembles breadcrumbs. Stir in sugar and pear, and then add egg and milk. Mix to a soft batter. Spoon over topping and level surface.

Cover with greaseproof paper, and microwave on high for four and a half to five minutes.

Standing time: five minutes. Serve with thick cream or ice cream.

Thanks for the recipe Liz -it sounds yummy! Love to get recipes from the U.K. - reminds me of my childhood - many years ago. Hope this is a weight watchers's recipe! lol
