Ranch Aspic Recipe

A very dear friend of mine would like to have her mother's Ranch Aspic for dinner in a couple of weeks. Her mother has Alzheimer's and can't remember how she made it and I've searched the web with no results whatsoever.

My friend did say Campbell's Tomato Soup was used but doesn't know how the Ranch flavor was created. Can anyone help me? My friend is very sad about her mother and would like to salvage this recipe if we can.

Thanks so much in advance! (I will be posting more requests as well for other recipes her mother used to make if I can't locate a similar online.)

Pineapple Sponge

Ingredients

  • 1 large can crushed pineapple
  • 1 cup sugar
  • 2 Envelopes Knox gelatin
  • 1 large carton La creme or Cool Whip

Directions

Mix pineapple and sugar in pan, bring to a boil. Cook 9 minutes.

Dissolve Knox in 1/4 cup cold water. Mix with hot pineapple mixture. Let cool until partly set like Jello. Whip until frothy; add container of La Creme or Cool Whip. Pour into a 9 x 13 inch pyrex dish. Refrigerate until firm. Cut into squares to serve.

Tomato Ginger Upside-Down Cake

Ingredients

  • 1 Stick butter, melted
  • 1 Tbsp. Grated fresh ginger
  • 6 Tbsp. Light brown sugar
  • 3 Ripe tomatoes, skinned, seeded and sliced 1/4 inch thick
  • 1 Stick butter
  • 1 1/2 cups brown sugar
  • 1/2 cup Molasses
  • 2 1/2 cups Unbleached white flour
  • 2 tsp. Baking powder
  • 1 Tbsp. Ground ginger
  • 1/2 tsp. Ground cloves
  • 1 cup Buttermilk

Directions

Preheat oven to 350 degrees F. Combine the melted butter with the ginger and sugar and spread evenly on the bottom of a 10 x 14 inch baking pan. Cover with tomato slices.

Meanwhile, in a mixer, cream the butter with the brown sugar and molasses.

In another bowl, sift together the flour, baking powder and spices.

Add flour mixture, alternately with the buttermilk to the creamed butter and sugar. Pour batter over tomatoes in baking pan.

Bake for approximately 40 minutes, or until a toothpick comes out clean when testing the center of the cake.

Remove from the oven, loosen outer edges with a knife and invert onto a platter larger than the baking pan. Let stand at least 5 minutes before trying to remove the pan. Serve warm with whipped cream or vanilla ice cream.

Beef Taco Bake

Quick and Cheap Taco Bake

Ingredients:

  • 1 14 ounce package Mac and Cheese
  • 1 lb. ground beef
  • 1 1/4 package taco seasoning
  • 3/4 cup sour cream
  • 1 1/2 cup cheese
  • 1 cup salsa

Directions:

Preheat oven to 400F. Prepare mac and cheese as directed. Brown the ground beef. Add taco season and 3/4 cup water. Simmer for 5 minutes. Stir sour cream into mac and cheese. Spoon 1/2 of mac and cheese mix into bottom of an 8 inch baking dish; top with meat mix, and 1 cup cheese. Then top with the remaining mac and cheese. Cover and bake for 15 mins. then top with cheese and salsa. Bake uncovered for 5 more minutes.

Beef Taco Bake

Ingredients

  1. 1 pound hamburger
  2. 1 (10 3/4 oz) tomato soup
  3. 1 cup salsa
  4. 1/2 cup milk
  5. 6 (8 inch) corn tortillas, torn into 1 inch pieces
  6. 1 cup shredded cheddar cheese

Directions

Cook beef until brown, drain.

Add soup, salsa, milk tortillas and 1/2 of cheese.

Pour into 2 qt cooking dish.

Cover and bake at 400 degrees F for 30 minutes. Sprinkle with remaining cheese.

Smoked Mozzarella Sandwiches

Ingredients

  • 12 slices Italian bread
  • 1 lb. Mozzarella
  • Fresh Basil
  • Tomato
  • 1 clove garlic
  • 1/3 cup extra-virgin olive oil

Directions

Heat olive oil on low heat with a clove of garlic cracked open.

Place one to two slices of smoked fresh mozzarella on bread along with one to two slices on tomato.

Place one basil leaf on top of the tomato and put a slice of bread on top.

Brush the infused olive oil on both pieces of bread.

Put sandwich in a large pan on medium heat.

Place a heavy cast iron pan on top of the sandwich to squish it down.

Cook until bread is lightly browned and cheese is melted.

You can use these sandwiches as a soup dipper or can be dipped in marinara.

Oven-Baked Flounder

Ingredients

  • 2 (6 oz) Flounder fillets
  • 1 garlic clove, minced
  • 2 Tbsp.fresh lemon juice
  • 2 tsp. soy sauce
  • 1/2 tsp. sugar
  • 1/4 - 1/2 tsp. salt
  • 2 Tbsp. olive oil

Directions

Preheat oven to 450 degrees F.

Arrange fillets in ceramic or glass baking dish just large enough to hold fillets in 1 layer. Combine garlic and next 4 ingredients to make vinaigrette; whisk in oil and pour over fillets.

Bake in middle of oven for 5 to 7 minutes or until fish flakes easily when pierced with a fork.
