Recipe Requests
I have about a dozen fresh limes. What can I use them for other than to add to beverages? I am going on vacation in one week and will not be returning for 3 weeks. I don't think the limes will hold up until then.

Substitution for Cream in Truffles
Could I substitute cream with something else while melting it with chocolate to reduce the calories if I were making truffles?

Couldn't be easier
Combine corn with milk, powdered bouillon, butter, salt, pepper, garlic powder and onion powder to taste. You can also add any herbs you like, dried or fresh.
Pulverize in blender or with wand till almost all the corn is suspended in the milk.
Combine 1 rounded Tbsp. flour with enough of the corn liquid to make it pourable. Set this aside.
Heat the corn/milk mixture. When it begins to simmer, slowly add the flour slurry, stirring until it is as thick as you want it.
Pour into bowls, top with anything you like (pat of butter? parsley? cracked peppercorns? Caraway seeds? Croutons? etc.) Enjoy!
Makes about 4 servings

Mix cream cheese, milk and sugar until smooth. Fold in topping and spread on bottom of crust. Pour milk and pudding in a bowl. Mix well. (Mixture will be thick). Stir in pumpkin and spices with wire whisk. Spread over cream cheese layer. Garnish with topping, a dollop on each piece. Refrigerate a few hours before serving. A substitute for pumpkin pie spice is 1 tsp. cinnamon, 1/2 tsp. ground ginger, and 1/4 tsp. cloves.

Combine sugar, syrup, and milk; mix well. Cook to about 238 degrees F, using candy thermometer. Take off and add butter at once. Cool till lukewarm.
Beat till think and creamy. Add nuts, coconut, salt, and flavoring and mix in. Pour out in buttered pan. Cut in squares when cold and set.

Preheat oven to 350 degrees F. Put 1/3 of the frozen potatoes in a 13x9 inch dish. Add chopped onion. Put in rest of potatoes and add pepper. Melt together cheese and butter. Whisk until smooth. Whisk in milk. Pour over potatoes and cover pan w/foil. Bake for 1 hour. Remove foil and bake 30 minutes.

Temp. 450 F - Time: 20 minutes
Combine potatoes, white sauce, salt and pepper to taste. Pour into a greased casserole. Sprinkle grated cheese and bread crumbs over the top and brown in a preheated oven.

Delmonico Potatoes
Preheat oven to 350.
Put 1/2 of the frozen potatoes in a 13 x 9 dish.
Put onion on that & sprinkle on pepper.
Put the last of the potatoes on top.
Melt together cheese & butter.
When melted, blend in cream.
Pour over potatoes & cover pan w/foil.
Bake for 1 hr. Remove foil & bake 15 mins.

Mix first 5 ingredients together and put in a greased 9x13 inch pan. Arrange pepperoni slices on top and sprinkle with 1 cup or more mozzarella cheese. Bake for 25 minutes at 350 degrees.

This was always my Mom's favorite quick supper. She was a teacher who often didn't have alot of time after school to plan a meal for the five of us. We all loved it! It is a quick and easy supper for 4-5 people. It requires only 4 ingredients and they are staples that almost everyone always has on hand. It "seasons" itself and really does taste like pizza. Serve with a tossed salad for a healthy full meal!
Brown hamburger. In square pan layer in following order; 1/4 hamburger, cover with saltines, cover with sliced cheese, cover with 1/2 can tomato soup (undiluted. Repeat layers ending with tomato soup. Bake in 350 degree oven for 30 minutes . Let sit for 5 minutes. Cut in squares and serve.

(A flexible recipe)
Cook pasta, fry meat and onion, then add all but the cheese and mix.
Put 1/2 mixed ingredients in a baking dish, add 1/2 of the cheese, then the rest of the mix and top with the remaining cheese.
Bake at 350 degrees for 30 min.

Brown beef and onion together; drain. Prepare noodles per package directions; drain. Stir noodles, sauce and soup into meat mixture. Place in a greased 9x13 dish. Bake, uncovered at 350 degrees F for 1 hour. Top with shredded cheese during the last 10 minutes of baking time.

Combine ground beef, green pepper and onion in a 2 qt. casserole dish. Cover and cook on high in the microwave for 5 minutes, stirring once, or until beef loses its pink color; drain. Add remianing ingredeitns, except mozzarella cheese and mix well. Cover and cook 15 to 17 minutes on high, stirring at 4 minute intervals. Top with mozzarella cheese; recover and let stand 5-10 minutes. Serves 6

In a skillet, brown beef and onion until beef is no longer pink and onion is tender. Drain any fat. Add all remaining ingredients. Spoon into a greased 2 qt. casserole. Bake at 350 degrees F for 40 minutes. 6 servings.

Brown meat and chopped onion together and season with salt and pepper, unless you are using seasoned sausage. (Sausage is best). Grease a casserole dish; mix and bake at 350 degrees F for 45 minutes. Top with more cheese and pepperoni, about 15 minutes before it's finished, if you wish.

Cook and drain noodles. Fry hamburger. Add salt, onions and peppers. Heat tomato juice. Mix sugar, flour and spices. Add water to make a thin paste. Add paste to hot tomato juice, stirring until boiling. Remove from burner. Add cream of mushroom soup and Velveeta cheese. Stir until cheese is mostly melted. Put noodles, hamburger and tomato sauce together in roaster. Add mushrooms and pepperoni and mix. Bake at 350 degrees F for 45 minutes.

In a saucepan over low heat, melt the butter; stir in brown sugar and corn syrup until the sugar is dissolved. Stir in 1/4 cup peanut butter and vanilla until blended. Add the oats; mix well.
Press into a greased 13x9x2 inch baking pan. Bake at 375 degrees F for 12 to 15 minutes. Meanwhile, melt the chips and remaining peanut butter; stir in peanuts. Spread over crust. Refrigerate until cool; cut into bars.
YIELD: 6-1/2 dozen.

Homemade Chocolate and Vanilla Pudding Mix It's easy to make your own homemade pudding mixes. They cost much less than the commercially made mixes. We freeze this to make homemade fudge pops!
Combine all the dry ingredients and store in an airtight container. The mix fits in a quart jar.
Add 2/3 cup mix to a saucepan. Add 2 cups milk and stir until blended. Bring to a boil, reduce heat and simmer while stirring constantly until thickened. Cool and serve.

Cook spaghetti and drain. Cook bacon and break up. Saute' mushrooms and onions in 2 Tbsp. bacon grease. Remove mushrooms and onions and melt butter with bacon grease. Add everything in the pan and toss with a fork lightly. Add egg yolks gradually and mix well. Serve immediately. This recipe was acquired from Italy!

Beat eggs until light; beat in sugar. Add some oil to egg mixture; then alternate with dry ingredients. Last fold in fruit, juice and all. May sprinkle 1/3 cup coconut on top after batter is in pan, if desired. Bake at 350 degrees F. for 35-40 minutes. A delicious moist cake!

Mix dry ingredients thoroughly and cut shortening in. Refrigerate in sealable plastic container. Keeps indefinitely.
Mix and bake in large cake pan for about 25 minutes at 350 degrees F (preheated).
