Egg Breakfast Sandwich

Cut both ends out of an empty, clean tuna can. Spray with cooking spray, place on a skillet, hold down and fill with a beaten egg. You can add diced ham, cheese, vegetables, etc. Cook on low-med heat until firm. Run a knife around inside edges of can to loosen the egg, and remove can. Flip egg over to cook other side. Serve as a sandwich ("Egg McMuffin") using toast, English muffin, or homemade biscuit.

Dollar stores, Big Lots, Dollar General, etc... often sell un-name brand tuna and chicken in cans with 2 bottoms.

I recently made some again but couldnt find my can rings I had so I cooked the eggs in the microwave in the bottom of a (microwave safe) coffee cup. The cup needs to be pretty wide on the bottom or they turn out too tall for my liking. I think a custard cup or small ramekin would work as well. I sprayed it with a quick shot of non-stick spray and it comes right out if you turn the mug upside down.

I haven't seen a tuna can that had two sides you could cut
in a very long time. Most have the rounded bottom!

Where do you get tuna cans with two removable ends anymore? All the ones I have have that rounded bottom that can't be opened with a can opener.

We have some eggs in our refrigerator that I want to use up before we go on vacation. I was planning on scambled eggs and sausage for supper this tonight. But I'm going to try your recipe instead.
