Molasses Kris Kringles

Ingredients:
  • 1 c. granulated sugar
  • 3/4 c. Crisco shortening
  • 1/4 c. unsulfured molasses
  • 1 egg
  • 2 c. all purpose flour
  • 1 t. baking powder
  • 1 t. baking soda
  • 1 t. ginger
  • 1 t. cinnamon
  • 1/2 t. cloves
  • 1/2 t. nutmeg
  • 1/4 t. salt
  • Granulated sugar

Directions:

Combine sugar and shortening in large bowl. Beat at medium speed of electric mixer until well blended. Add molasses and egg. Beat well. Combine flour, baking powder, baking soda, ginger, cinnamon, cloves, nutmeg and salt. Add to creamed mixture at low speed until just blended. Wrap dough with plastic wrap. Refrigerate dough at least two hours or overnight. Heat oven to 375 degrees. Grease baking sheet lightly with shortening. Place sheets of foil on countertop for cooling cookies. Form dough into one-inch balls. Roll in granulated sugar. Place two inches apart on prepared baking sheet. Bake one sheet at a time at 375 degrees for 7-9 minutes or until bottom is set. Do not over bake. Cool two minutes. Makes about 3 1/2 dozen cookies.
