Today's Recipes


Googly Eye Cake

Ingredients:

  • A cake mix for a double layer 10" round cake. (You'll also need the ingredients required by the cake mix instructions.)
  • Two cans of chocolate frosting.
  • A pastry bag and several tips (star and thin).
  • Two tubes of decorative icing (white and black).
  • An assortment of candy such as Necco Wafers, Life Savers (Gummy or Hard), M&Ms (Different Sizes), etc.

Directions:

Make two 10" round cakes using one box of cake mix. Cool and remove the cakes from the pans according to the instructions.

Place one layer on a plate, cover the top with frosting and frost the sides lightly.

Place the second layer on top.

Put the remainder of the frosting in the pastry bag and use the star tip to make the cake look "furry". You should cover the top of the cake and down the sides of the top layer with frosting.

Decorate the cake using the round candies and the decorative icing with the thin tip. Place two round candies side by side and affix smaller candies to the front using icing. The pupil of the eyes can be made using white icing.

Black icing can be used for eyebrows either above the eyes, around the eyes, or in a line slanted across each eye. Black icing can also be used for eye lashes. You can also add light glints and other effects.

Variations and Hints:

  • Brown makes for the best "fur" color, but other colors of frosting can be used.
  • A different flavor of frosting or a pudding can be used between the layer cakes.
  • We put the number candle on before the eyes so we were sure there'd be room for it.
  • Lighter candies should be placed on the sides of the cake so they don't slide down.
  • Some of the eyes can be centered and others at crazy angles for a googly eyes effect.

    Tamale Pie

    Ingredients

    • 1 lb. hamburger
    • 1 can (11 1/4 oz) fiesta chili beef soup
    • 1/2 cup water
    • 1/2 cup chunky salsa
    • 1/2 cup whole kernel corn
    • 1 pkg (8 oz) corn muffin mix

    Directions

    Preheat oven to 400 degrees F.

    Brown hamburger, drain off fat.

    Add soup, water, salsa and corn. spoon beef mixture into 2 qt baking dish.

    Prepare corn muffin mix as directed on package. Pour over beef mixture and bake 20 minutes or until golden.

    Serves 6

    Pot Roast with Harvest Vegetables

    Ingredients

    • 2 Tbsp. vegetable oil
    • 3 lbs. rump roast
    • 1 (14 oz) can beef broth
    • 3/4 cup v8 juice
    • 2 cups frozen baby carrots
    • 3 medium potatoes, peeled and quartered
    • 3 stalks celery cut into 1 inch pieces
    • 2 Tbsp. flour
    • 1/4 cup water

    Directions

    Heat oil in saucepan, add roast and cook until browned on all sides. Pour off fat.

    Add broth and vegetable juice. Heat to a boil.

    Cover and cook over low heat 1 hr 45 minutes.

    Add vegetables. cover and cook 30 minutes or until tender. remove roast and vegetables and keep warm.

    Mix flour and water. Add to saucepan. Cook and stir until mixture boils and thickens. Slice roast, cover with gravy and serve with vegetables.

    Caramel Apple Dessert Squares

    Ingredients

    • 1 1/2 cups bisquick
    • 2/3 cup sugar
    • 1/2 cup milk
    • 2 medium cooking apples, peeled and sliced (2 cups)
    • 3/4 cup packed brown sugar
    • 1 cup boiling water
    • 1 tsp. lemon juice
    • 1/2 tsp. cinnamon

    Directions

    Heat oven to 350 degrees F.

    Mix bisquick and sugar in medium bowl. Slowly pour in milk and mix until blended.

    Pour into ungreased 9x9x2 pan. Top with apples, sprinkle with lemon juice. Mix brown sugar and cinnamon. Sprinkle over apples. Pour boiling water over apples.

    Bake for 50-60 minutes or until toothpick inserted into center comes out clean top with a little cool whip or ice cream if prefered.

    Spooky Spider Treats

    Ingredients

    • 1 cup chocolate chips or butterscotch chips(6 oz.)
    • 2 cups chow mein noodles
    • 1/2 cup peanuts or walnuts

    Directions

    Cover a baking sheet with waxed paper.

    In a small saucepan over low heat, melt chips. Stir until smooth.

    Remove from heat.

    Stir in noodles and nuts until well coated.

    Drop by spoonfuls onto waxed paper.

    Chill for 15 minutes or until firm.

    Remove from refrigerator.

    Chocolate Chip Pudding Cookies

    Ingredients

    • 3 1/3 cups flour
    • 1 1/2 tsp. baking soda
    • 1 1/2 cups margarine
    • 1 cup brown sugar (firmly packed)
    • 1/2 cup white sugar
    • 1 (6 oz.) box instant pudding (your choice of flavor)
    • 1 1/2 tsp. vanilla
    • 3 eggs
    • 1 pkg. chocolate chips

    Directions

    Mix flour with baking soda. Combine margarine, sugars, pudding mix and vanilla in a large bowl; beat until smooth and creamy.

    Beat in eggs. Gradually add flour mixture; then stir in chips.

    Drop by ice cream scoops full onto ungreased cookie sheet.

    Bake between 350 to 375 degrees F. for 10 minutes (Temperature depends on your oven).

    Remove from oven, allow cookies to sit on cookie sheet 3 minutes more.

    Remove from sheet. Cool completely.

    Slow Cooker Hearty Beef and Bean Chili

    Ingredients

    • 1 1/2 lb. hamburger
    • 1 large onion, chopped
    • 1 can (10 3/4 oz) tomato soup
    • 1 can (14 1/2 oz) diced tomatoes
    • 1/2 cup water
    • 2 cans(15 each) red kidney beans
    • chili powder as desired
    • 2 tsp. ground cumin

    Directions

    Cook hamburger until browned, drain off fat.

    Add beef to remainder of ingredients place in slow cooker on low heat and cook 6-8 hours or on high 3-5 hours.
