Pumpkin Muffins

Ingredients:

  • 1 cup flour
  • 1/2 cup brown sugar
  • 2 tsp. baking powder
  • 1 tsp. pumpkin pie spice
  • 1/2 tsp. salt
  • 1/4 tsp. baking soda
  • 3/4 cup canned pumpkin
  • 1 egg, slightly beaten
  • 1/4 cup milk
  • 1/4 cup sunflower oil
  • 1 cup oats
  • 1/2 cup sunflower seeds
Topping:
  • 1 Tbsp. sunflower oil
  • 1/3 cup brown sugar
  • 1 tsp. flour
  • 1/4 tsp. pumpkin pie spice
  • 3 Tbsp. sunflower seeds

Directions:

Sift dry ingredients. Combine pumpkin, egg, milk and oil. Add to dry ingredients. Add oats and seeds. Fill paper baking cups 3/4 full. Sprinkle with topping. Bake for 18-20 minutes at 400 degrees F. Makes 12-14 muffins.

For topping: Mix all until crumbly.

    This recipe was shared with me by a parent while I was teaching. She told me this was the way she had gotten her children to not only eat pumpkin but to also eat breakfast.

    Combine sugar, butter/oleo and molasses; beat well. Add eggs and pumpkin, beating till smooth.

Recipe: Pumpkin Muffins

This recipe was shared with me by a parent while I was teaching. She told me this was the way she had gotten her children to not only eat pumpkin but to also eat breakfast. The next day she showed up with the muffins for our family. It worked for my son. Now he makes them at least once each fall and eats other pumpkin dishes. The ingredients stay in our pantry. I have put them in Christmas gift baskets and taken them to parties. Every time, without fail, I am ask to share this recipe.

Ingredients:

Dry
  • 1 cup sugar
  • 1 1/2 cups plain flour (this can be half whole wheat flour that has been sifted)
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1 (3 1/2 oz.) box instant vanilla pudding
Wet:
  • 1 can pumpkin
  • 1 1/2 cups vegetable oil
  • 2 eggs

Directions:

Mix dry ingredients and set aside. Mix wet ingredients. Make a well in the dry flour mixture, add wet ingredients and stir until mixed. Add 2/3 cup of mini chocolate chips. You can also use raisins and or nuts.

Bake 20 minutes at 375 degrees F.

Servings: 12 large
Time:10 min. Minutes Preparation Time
Bake 20 min. Minutes Cooking Time

I love recipes that use things like cake mix or instant pudding mix. I will try these for sure when I have time. Changing up the flavors could be fun. my fav quicke pumpkin muffin has three ingredients. One large box Spice Cake mix One 15 oz can pumpkin One cup chocolate chips Mix it together as is, put in muffin tins, bake at 350 degrees for about twenty mintues. Done. (10/24/2009)

  • 1/2 cup butter or oleo, softened
  • 1/4 cup molasses
  • 1 egg, beaten
  • 1 cup canned pumpkin*
  • 1 3/4 cup all purpose flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup chopped nuts or raisins

Directions

Combine sugar, butter/oleo and molasses; beat well. Add eggs and pumpkin, beating till smooth. Stir together rest of ingredients; add to pumpkin mixture, stirring just until moistened. Batter will be lumpy. Fill lightly greased muffin pans 1/2 full. Bake at 350 degrees F for 20 minutes. Makes: about 15.

*if you cook your own pumpkin, just use 1 cup, instead of the canned pumpkin

  • 1/2 cup oil
  • 4 eggs, beaten
  • 1 1/2 cups cooked pumpkin
  • 3 cups whole wheat flour, sifted
  • 1 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cloves
  • 1 tsp. cinnamon
  • 3/4 tsp. nutmeg
  • 1 tsp. allspice
  • 1 tsp. salt
  • 1 cup raisins
  • 1 cup walnuts, coarsely chopped

Directions

Place honey, oil, eggs and pumpkin in bowl and mix. Sift flour, baking powder, baking soda, salt and spices. Add to first mixture and mix. Add raisins and walnuts. Place in greased muffin pans and bake at 400 degrees F for 15 minutes. Allow to cool 5 minutes and then remove from pan. Makes 2 dozen.

  • 1 Tbsp. cinnamon
  • 1 Tbsp. nutmeg
  • 1 1/2 cups walnuts or pecans, chopped
  • 2 1/2 cups pumpkin
  • 4 eggs
  • 1 cup oil
  • 1 cup water

Directions

Mix together all the dry ingredients and make a "well" in the middle. In a separate bowl, beat eggs and then add pumpkin, oil and water. Mix well. Add to dry ingredients and stir until moist. Do not over-stir! Spoon into muffin pans about two-thirds full and bake for 20 minutes at 375 degrees F. Immediately remove from pan. Serve and enjoy!
