Garden Special

Ingredients

  • 1 qt. celery
  • 1 qt. onions
  • 1 qt. green peppers
  • 1 qt. water
  • 4 qts. tomatoes, chopped
  • 3 Tbsp. salt
  • 2 Tbsp. sugar

Directions

Cut celery, onions and peppers in small pieces and cook in water 20 minutes. Add chopped tomatoes, salt and sugar. Bring to a boil and pour into jars. Process in boiling water for 30 minutes for quarts or 25 minutes for pints. Use this mix for soup, pour over meatloaf, etc. Can also be used as a sauce for meatballs, chili or put through a strainer and equal parts of tomato juice for a tomato juice cocktail.
