Lemon Curd Tart

In school, one of the desserts provided was Lemon Curd tart. I loved the lemon curd that they used but cannot find it anywhere. Mass produced Mr. Kipling lemon tarts just don't do it for me, it is not the same. Anyone know what I am referring to and where I could purchase it.

Cream Cheese and Pepper Jelly Dip Recipe

I am looking for a recipe that used cream cheese, I believe. You pour green or red pepper jelly over it and serve it with crackers? Is that all I need to do? How much cream cheese do I use and do you get the whipped kind or the blocks?

I need a Wow! appetizer for the family Christmas get together and I am cooking challenged. Any help would be appreciated!

Bear Creak Potato Soup Recipe

McDonalds BBQ Sauce Recipe

I absolutely love the bbq sauce that Mcdonalds uses on their McRib sandwiches and was wondering if anyone had a copycat recipe for this. Thank you in advance for any help with this.

Mock Apple Pie

Pie

Ingredients

  • 1-1/3 cup boiling water
  • 16 Ritz coarsely broken crackers (plain soda crackers will work here)
  • 1-1/3 cup sugar
  • Butter (the size of a walnut)
  • 1-1/3 teaspoon cream of tartar
  • 1/2 teaspoon cinnamon

Directions

Combine all ingredients except water. Have double pie crust ready. Add water to ingredients, stir in quickly and pour into crust. Cover with top crust and bake at 350 degrees F for 30 minutes.

Never Fail Pie Crust

Ingredients

  • 3 cups flour
  • 1-1/4 cups shortening, *
  • 1 teaspoon salt
  • 1 egg, well beaten
  • 5 Tablespoons water
  • 1 Tablespoon vinegar

Directions

Cut shortening into flour until finely crumbled and add salt.combine egg, water and vinegar. Make a well in the flour and add wet ingredients all at once. Blend with a fork until flour is moist and dough

*Blue Bonnet margarine works well in place of shortening... easy to measure.

This dough can be rerolled without being tough, so you can use scraps to make another crust or to cover a pot pie. To make a prebaked pie shell, make a foil form. After you put your crust in the pan, set the foil form in and fill with dried beans. Bake 15 minutes, then lift out form and beans carefully and continue to bake crust until golden brown.

Fried Apples

Quick and Easy

Ingredients

  • 6 to 8 mediium apples - peeled and cut in wedges
  • 2 Tbsp. butter or margarine
  • 1/3 cup brown sugar - more if using tart apples.
  • 1 tsp. cinnamon
  • 2 or 3 Tbsp. water
  • dash of nutmeg (optional)

Directions

Add margarine to skillet over medium heat, then add apples. Saute over medium heat, for about 10 minutes. Apples should be fork tender. Don't overcook or you'll have apple sauce. Over medium-high heat, add brown sugar, plus a few tablespoonsful of water to caramelize apples. Toss gently just until all apples are coated. Remove from heat and stir in cinnamon and nutmeg (if using). Serve warm as a side dish in place of a vegetable, or over ice cream as a dessert.

Cooking time and the amount of brown sugar varies according to the variety of apple you are using. Use any variety, but fried apples are best when made with a firm apple like red or yellow delicious.

Old-Fashioned Mince Cookies

Ingredients

  • 1 cup butter
  • 2 cups brown sugar, firmly packed*
  • 2 eggs, well beaten.
  • 1-1/3 cups (or 1/2 jar) prepared mincemeat OR mincemeat with brandy.
  • 1 teaspoon grated lemon rind.
  • 4 cups all-purpose flour, sifted
  • 1 teaspoon baking soda
  • 1 teaspoon salt
Recipe may be doubled, using the whole jar of mincemeat (the kind with brandy is especially delicious, but you can add a little rum, if desired).

*Light brown is recommended, as the dark imparts its own flavor, which is unnecessary.

Directions

Heat oven to 375 degrees F. Grease or line with foil or parchment paper cookie sheets. Depending on your oven's capacity, four are recommended; using two at a time and allowing the other two to cool between batches. This recipe make a lot of cookies: 245-250 when doubling recipe! Cream butter until fluffy. Add sugar very gradually; beat until light. Stir in eggs. Add mincemeat and lemon rind; blend. Sift together sifted flour, soda and salt; blend into mincemeat mixture. Drop by teaspoonsful onto prepared cookie sheets. Bake about 10 minutes or until cookies are puffed and golden brown. Remove from oven and cool for one minutes before removing to wire racks. Store tightly covered for soft cookies (put plastic wrap or foil between layers because they stick together in storage). Store loosely covered for crisper version.

One year, a co-worker found out I had drawn her name for Christmas gift-giving. She said all she wanted was a batch of these all to herself! (I had made them at a previous potluck.) I made them for her, another satisfied friend!

Marshmallow Ooeys

Base Ingredients

  • 2/3 cup flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup butter or margarine
  • 2 squares unsweetened chocolate
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla

Topping Ingredients

  • 4 cups miniature marshmallows
  • 1 square semi sweet chocolate
  • 1 tsp butter or margarine

Directions

Mix together first 3 ingredients. Set aside. Melt butter and chocolate. Beat in remaining ingredients. Stir in flour mixture. Spread in greased 8 inch pan. Bake at 350 degrees F for 25 minutes. Immediately sprinkle base with marshmallows. Broil until golden brown, about 3-5 minutes. Melt together chocolate and butter. Drizzle over squares. This is so yummy, we just leave a spoon in it and have a bite every time we pass by! LOL! Bad habit but fun! I use the microwave and a glass measuring cup for melting the chocolate and butter. Works great! Enjoy!

Lime Jelly Salad

Ingredients

  • 1 package Lime Jello (or other flavor);
  • 500 gm Cottage cheese;
  • 1 can (398 ml) Crushed Pineapple, drained

Directions

Stir together, then add 500 ml Cool Whip (partly thawed). Stir gently together. Put in fridge. Eat right away or good later. It's a nice green color for Xmas! Tastes great too! Enjoy!

Hot Spices Afternoon Tea

Ingredients

  • 4 qts. water
  • 1 tsp. whole cloves
  • 1 stick cinnamon
  • 5 level Tbsp. loose tea or 15 tea bags
  • 1 1/4 cups sugar
  • 1 cup orange juice
  • 3/4 cup fresh lemon juice

Directions

Add spices to water. Bring to full rolling boil. Remove from heat. Immediately add tea. Brew 4 minutes. Stir and strain. Add sugar, stir until dissolved. Add fruit juices. To reheat for serving, place over low heat. DO NOT BOIL! A delicious tea to serve to a large group.
