Recipe calls for vanilla and you don't have any? I use pancake syrup or Karo syrup in place of the vanilla. Works great, tastes great!

Isn't vanilla used as a hardening agent in some recipes? If I don't use it in no bake oatmeal cookies, will they still firm up?

I have also used fresh lemon juice or "RealLemon" in place of vanilla - in fact I prefer it in some recipes.
