Jello Creamsicle

I am looking for a recipe for a jello mixture that tastes like a creamsicle. I have looked high and low with no results and the lady won't give out her family recipe. The dessert has mandarin oranges, Cool Whip and what else in it?

Recipes Using Sardines

I have bought a couple of cans of sardines and would like to know what I can make with them. I usually use salmon and tuna but the calcium in sardines is high as well. I have high cholesterol and am looking at ways of lowering it. I only buy water pack fish.

Carrot and Cranberry Salad

Ingredients

  • 3 carrots
  • 1 cup dried cranberries
  • 1 Tbsp. honey
  • 2 tsp. lemon juice
  • 1/8 tsp. salt
  • Pepper to taste.
  • 3 Tbsp. sunflower seeds or toasted almonds
  • 1/4 cup coconut flakes (Opt.)

Directions

Toss ingredients together. Mix honey and lemon juice together. Drizzle over top. Chill and serve

Sunshine Spinach Salad

Ingredients

  • 1 envelope nonfat salad dressing for Honey Mustard Fat Free Dressing (Good Seasons is good)
  • 1/4 cup vinegar
  • 2 Tbsp. orange juice
  • 1/2 cup water
  • 1/2 tsp. grated orange peel (opt.)
  • 8 cup torn spinach
  • 3 oranges, sectioned
  • 1 small red onion, thinly sliced
  • 6 slices turkey bacon, cut into 1 inch pieces, cooked

Directions

Prepare salad dressing mix with vinegar, orange juice and water as directed on envelope, substituting orange juice for the 2 Tbsp. water and add ing orange peel. Mix spinach, orange sections, onion, and turkey bacon in large bowl. Add dressing; toss lightly. Serve immediately. Makes 6 servings.

German Potato Salad

Ingredients

  • 5 lb. red potatoes, cooked, peeled and sliced
  • 10-12 eggs, boiled and sliced
  • 1/2 -1 lb. bacon
  • 1 onion, medium size, diced

Dressing:

  • 3/4 cup vinegar
  • 1/4 cup water
  • 1/2 cup sugar
  • salt and pepper to taste
  • bacon grease
  • 2 Tbsp. cornstarch mixed in 2 Tbsp. water

Directions

Fry bacon crisp and crumble. Reserve grease. Add vinegar, water, sugar, salt and pepper to bacon grease. Bring to a boil and add cornstarch mixed in cold water. Cook until clear and pour over potatoes, eggs, bacon and onions. Allow flavors to blend a few hours before serving. Serve warm.

Quick, Easy Strawberry Shortcake

I don't know if this qualifies for a recipe but it sure makes for a substitute Strawberry dessert if you are pressed for time or don't have ingredients on hand!

Ingredients

  • fresh or frozen strawberries
  • Ritz Crackers (broken up)
  • milk or cream, if desired

Directions

Fix strawberries just like you would for strawberry shortcake. Crush or break-up ritz crackers (this substitutes for the shortcake). Cover crackers with strawberries and add milk or cream if you wish. Believe me this almost tastes like the real thing!

Lazy Daisy Cake

Ingredients

  • 2 eggs
  • 1 cup sugar
  • 1 tsp. vanilla
  • 1 cup flour
  • 1 tsp. baking powder
  • 1/8 tsp. salt
  • 2 tsp. butter
  • 1/2 cup milk

Topping:

  • 1/2 cup brown sugar
  • 4 1/2 Tbsp. butter
  • 3 Tbsp. cream
  • 1/2 cup coconut

Directions

Beat two eggs until thick. Beat in sugar and vanilla. Sift together flour, baking powder and salt; add to egg mixture. Heat milk and butter to lukewarm; remove from heat and add to batter. Batter will be thin. Pour into greased and floured 8 inch square pan. Bake at 350 degrees F for 25 minutes or until cake tests done.

Immediately combine ingredients for topping and spread over hot cake. Broil until light brown, about 5 minutes. Watch to prevent over browning.

Variation: Add 1/4 tsp. each cinnamon and nutmeg and 1/8 tsp. cloves to flour mixture in Lazy Daisy Cake recipe. Proceed as directed.

Multi-Grain Bread

Ingredients

  • 1 package active dry yeast
  • 1/2 cup warm water
  • 1 egg
  • 1/2 cup sour cream
  • 1/4 cup honey
  • 2 Tbsp. oil
  • 1 tsp. salt
  • 2 2/3 cups white bread flour
  • 1/2 cup whole wheat graham flour
  • 1/4 cup wheat germ
  • 1/4 cup rye flour
  • 1/4 cup cracked wheat
  • 1 Tbsp. anise, caraway or fennel seed

Directions

In small bowl, sprinkle yeast in warm water, stirring to dissolve. In a large mixing bowl, lightly beat the egg, stir in sour cream, honey, oil and salt. Add dissolved yeast and 1 1/2 cup white bread flour, beating with a wooden spoon until combined. Stir in whole wheat flour, wheat germ, rye flour and cracked wheat.

Stir in enough remaining white bread flour to make a soft dough. Dough will be sticky. Add just enough to be able to knead. Knead 10 minutes, until smooth and elastic. Place in a greased bowl and cover.

Let rise until doubled. Punch down, knead a few times and make into a loaf. Let rise until doubled. Bake 30-35 minutes at 375 degrees F, until slightly browned. Remove from pan and place on cooling rack. Butter top and sides. Cover with towel. Serve. Makes one loaf.
