Oat Waffles

Why make plain ol' white flour waffles when you can make healthier waffles from a whole grain like oatmeal?

Ingredients

  • 3/4 cup old fashioned oats
  • 3 Tbsp. butter or margarine
  • 1 1/4 cups flour
  • 1 Tbsp. sugar
  • 1 tsp. baking soda
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs
  • 1 cup milk (I use 1 cup yogurt plus 1/8 cup milk)

Directions

Cook oats with 1 cup water. Turn off heat. Stir in butter or margarine till melted. In a separate container, sift flour, sugar, powder, soda, and salt. Combine eggs and milk (or yogurt & milk). Add cooled oatmeal. Mix with dry ingredients till blended. Cook waffles.

Yummy (and healthy, too) =D

Better than only with "plain old white flour". Learn how ot change white flour into healthy by using other grains, such as: buckwheat, amaranth, quinoa, teff, rye, millet, etc. Recipes which require gluten to rise need flours with gluent (wheat, rye, millet, etc.)

Recipes with leavening agents, and/or eggs, require a little or even none. Waffles are a case in point. Then, add fruit, such as frozen blueberries and your healthiness is increased even more. Plus delicious. Enjoy.
