30 Day Muffins

Have you ever felt disappointed because after you eat that wonderful moist muffin and save the rest for the next day, you find out that they are not wonderful and moist anymore? Well don't be disappointed anymore because after you make the batter you can make a dozen then put the rest in the fridge for up to 30 days! They cook in just 10-15 minutes - that's just amazing! Hope you enjoy them because I did!

Ingredients:

  • 1/2 cup oil
  • 2 eggs
  • 1 1/2 cups of brown sugar
  • 5 ml of vanilla (1 tsp.)
  • 50 ml of milk (1/4 cup)
  • 5 ml of salt (1 tsp.)
  • 2 1/2 cups flour
  • 2 1/2 cups bran
  • 1 cup chopped dates
  • 10 ml of bicarbonate soda (2 tsp.)

Directions:

Whisk the oil, eggs, sugar, milk, and vanilla together. Add the remaining ingredients and mix well. Bake in a muffin pan at 350 degrees F for 10-15 minutes.

If you want them for another day you can keep the batter in the fridge.

Servings: 4 dosen
Time:10 Minutes Preparation Time
15 Minutes Cooking Time

Recipe: 30 Day Muffins

Healthy, tasty and can be kept in the fridge for 30 days.

Ingredients:

  • 2 large eggs
  • 125 ml sunflower oil
  • 185 ml brown sugar
  • 500 ml milk
  • 250 ml whole wheat flour.
  • 375 ml cake flour
  • 500 ml digestive bran
  • 5 ml vanilla essence
  • 1 ml salt
  • 10 ml bicarbonate of soda
  • 250 ml mixed dried fruit
  • 250 ml chopped dates

Directions:

Whisk eggs,oil and sugar together. Add all the other ingredients and mix. Let the mixture stand in an airtight container overnight.

Next morning preheat oven to 180 degrees C (350 degrees F).Grease a muffin tray and half fill the cups and bake for 15-20 minutes.

If you not baking muffins on that day, you can store it in the fridge.

Serve with butter and tea.

Senator Barbara Boxer is a great cook. She has created recipes for some of her favorite foods, e.g. lemon blueberry muffins. I have read on www.projectweightloss.com the recipe:

Ingredients

  • 2/3 cup of sugar
  • 2 cups of flour
  • 1/4 cup of butter or margarine, melted
  • 2 cups of blueberries, fresh or frozen
  • 1 cup of lemon yogurt
  • 1 tsp. of baking powder
  • 1/2 tsp. of salt
  • 1 to 2 tsp. of grated lemon peel
  • 1 tsp. of vanilla
  • 1 tsp. of baking soda
  • 1 egg, lightly beaten (09/30/2009)
