Uses for Bread Heels

We use the ends of bread (heels/left over pieces) for bread pudding. We put the 'leftovers' back into a bread bag and refreeze them. After thawing them for the second time they are already a little 'dry' and perfect for bread pudding.

Chocolate Chip Coffee Cake

A tasty sour cream coffee cake with a streak of chocolate chips in the middle!

Ingredients:

  • 1/2 cup butter, softened
  • 1 cup white sugar
  • 2 eggs
  • 1 cup sour cream
  • 1 tsp. vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 cup semisweet chocolate chips
  • 1/2 cup white sugar
  • 1 tsp. ground cinnamon

Directions:

Preheat oven to 350 degrees F (175 degrees C) grease and flour a 9x13 inch pan. In a medium bowl, stir together the flour, baking powder and soda. Set aside.

In a large bowl, cream the butter and 1 cup of sugar. Add eggs, sour cream and vanilla. Mix well. Add the flour mixture and combine. Batter will be thick. In a separate bowl, combine chocolate chips, 1/2 cup sugar and cinnamon. Set aside.

Spread half of the cake batter in prepared 9x13 inch pan. Sprinkle half of the chocolate chip mixture over the batter. Repeat with the remaining batter, and then the remaining chocolate chip mixture.

Bake at 350 degrees F (175 degrees C) for 25-30 minutes or until a toothpick inserted near the center comes out clean.

Servings: 24
Time:10 Minutes Preparation Time
30 Minutes Cooking Time

Basil Chicken Salad

Whether as a salad or sandwich filling it's quick, easy and tasty.

Ingredients:

  • Basil Chicken Salad
  • 1 cup cooked chicken, diced
  • 1/2 cup celery stalk, diced
  • 1/4 cup red bell pepper, diced
  • 1 Tbsp. fresh basil leaves, chopped
  • Mayonnaise to taste
  • Salt and pepper if desired

Directions:

Stir and serve. ;-)

Homemade Tomato Soup

I know what's in it and there are no preservatives

Ingredients:

  • 2-8 oz. cans of tomato sauce with no salt added (even store brands work)
  • 8 oz. can of water
  • 8 oz. can of heavy cream
  • 1 tsp. beef base (I use Better That Bouillon)
  • 1/2 tsp. salt (I use Celtic sea salt)
  • 1/2 tsp. sugar
  • 1/4 tsp. meat tenderizer (I use the kind without MSG)
  • 2 shakes of paprika
  • 3/8 tsp. onion powder
  • 1/8 tsp. garlic powder
  • 1/8 tsp. dried sweet basil

Directions:

Mix all together, bring to boil and simmer at least 5min. I let it simmer for about 20 minutes. It mixes the flavors well. This is delicious and the fat helps to slow the carbs from getting into the blood too fast and tastes fantastic.

I've tried it with tomato paste and no matter what I do, I can't get it to taste like the one with tomato sauce.

Servings: 24.5oz

Cottage Cheese Pie

A family favorite.

Ingredients:

  • 2 cups small curd cottage cheese
  • 2/3 cup whipping cream
  • 2/3 cup sugar
  • 2/3 cup all-purpose flour
  • 1/4 tsp. salt
  • 1 egg slightly beaten
  • 1 egg yolk slightly beaten
  • 1 Tbsp. corn syrup
  • 1 Tbps. melted butter
  • 1 pre-baked 9 inch pastry shell
  • lemon or orange slices (optional)

Directions:

With a mixer beat the cottage cheese until nearly smooth. Add whipping cream. Set aside. Then in a large mixing bowl combine the sugar, flour, and salt. Stir in the slightly beaten egg and egg yolk, corn syrup, and melted butter. Stir in the cottage cheese mixture.

Pour mixture into baked pastry shell and bake ar 350 degrees F. for 45-50 minutes or until a knife inserted near the center comes out clean. Cool pie. Place in refrigerator for 4 hours before serving. Top with slices of lemon or orange.

Serves 8.

Cheeseburger Bake

A "comfort food" recipe that feeds a larger family.

Ingredients:

  • 1 lb. ground beef
  • 3/4 cup finely chopped onion
  • 1 (10 3/4 oz.) can condensed Cheddar cheese soup
  • 1 cup frozen mixed vegetables (I omit)
  • 1/4 cup milk
  • 2 cups Bisquick
  • 3/4 cup water
  • 1 cup shredded Cheddar cheese (we prefer mozarella)

Directions:

Heat oven to 400 degrees F. Generously grease 13x9x2 inch baking dish. Cook beef and onion, drain. Stir in soup, vegetables and milk. Stir baking mix and water in the baking dish until moistened; spread evenly. Spread beef mixture over batter; sprinkle with cheese.

Servings: 8 to 10
Time:20 Minutes Preparation Time
30 min. Minutes Cooking Time

Robin's Recipe Corner:

Bar-B-Q Ribs

Ingredients

  • 3/4 cup water
  • 3/4 tsp. chili powder
  • 1 Tbsp. minced onion
  • 2 Tbsp. butter
  • 2 Tbsp. Worcestershire sauce
  • 1 tsp. paprika
  • 3/4 cup ketchup
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 Tbsp. vinegar
  • 2 Tbsp. brown sugar
  • 4 Tbsp. lemon juice
  • 1/2 tsp. dry mustard
  • 1/2 tsp. celery salt

Directions

Brown country style pork ribs well. Drain off grease. Combine other ingredients and cook 5 minutes. Pour over ribs and bake for 1 1/2 hours at 325-350 degrees F.

Hot Fudge Recipe

Ingredients

  • 1 can sweetened condensed milk
  • 1 tsp. vanilla
  • 2 semi-sweet chocolate squares
  • 1 Tbsp. water (if mixture is thick)

Directions

Mix sweetened condensed milk and chocolate together over low heat. Add 1 teaspoon vanilla. If this mixture gets too thick, add 1 tablespoon of water.

Cabbage Surprise

Ingredients

  • 1 medium head cabbage
  • 1 can mushroom soup
  • 1 pkg. grated cheese
  • season (to taste)

Directions

Boil cabbage until tender and then drain. Add mushroom soup over top. Add cheese over all of cabbage and mushrooms. Put in 350 degrees F oven for 15 minutes or until cheese is melted.
