Banana-Pecan Squares

Ingredients

  • 1/2 cup butter or margarine, softened
  • 3/4 cup sugar
  • 1 egg
  • 1 cup mashed ripe banana (about 2 medium bananas)
  • 1 tsp. vanilla
  • 1 1/2 cups flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup chopped pecans
  • pecan halves (opt.)

Directions

Preheat oven to 350 degrees F. In large mixing bowl, beat butter and sugar at medium speed of electric mixer until light and fluffy. Blend in egg, banana and vanilla. In medium bowl, combine flour, baking soda, and salt. Add to butter mixture; beat until well blended. Stir in chopped pecans. Spread batter into greased 9 inch square baking pan. Arrange pecan halves on top, if desired.

Bake 25 minutes or until center is set. Cool completely; cut into squares.
