Cinnamon Sour Cream Coffee Cake

Ingredients

  • 1 cup margarine or butter
  • 1 1/4 cups sugar
  • 2 eggs
  • 1 cup sour cream
  • 2 cups flour, sifted
  • 1/2 tsp. soda
  • 1 1/2 tsp. baking powder
  • 1 tsp. vanilla
  • 3/4 cup finely chopped walnuts
  • 1 tsp. cinnamon
  • 1/3 cup brown sugar

Directions

In large bowl of electric mixer, combine margarine or butter, sugar and eggs. Beat until mixture is light and fluffy. Blend in sour cream. Sift flour again with soda and baking powder into creamed mixture, add vanilla. Blend well. Combine the chopped nuts, cinnamon and brown sugar. Sprinkle half of cinnamon-nut mixture in bottom of well-greased and floured 9 inch tube pan. Spoon in half of batter. Sprinkle other half of cinnamon-nut mixture over batter; add rest of batter. Place in cold oven, set temperature at 350 degrees F and bake 55 minutes.

I use an ice cream scoop to distribute the batter more evenly. Works great!

this sounds yummy but I think I will use a 9 x 13 pan instead of a tube cake

what is a 9" tube pan?
