Adapting a BBQ Rib Recipe for Chicken

I have a recipe that says to cook ribs in 2 bottles of barbecue sauce and then cover the ribs the rest of the way with water and bring to a boil, then simmer till done. Then put the ribs on the outdoor gas grill and turn and baste for 20 minutes till brown. I did this and it was delicious. I wonder if chicken could be cooked the same way?

Creamed Peas Recipe

I have a favorite restaurant in the Jacksonville Florida area called "Jimmie's Buttermilk Chicken". They serve a wonderful (sweet) creamed peas as one of their side dishes. Does anyone have their recipe (or any real good recipe) for CREAMED PEAS (no potatoes, no mushrooms, no onions... JUST PEAS!)

Good Morning Orange Splash

Ingredients

  • 1- 6 0z. can frozen orange juice concentrate
  • 1 cup cold water
  • 1 cup milk
  • 1/3 cup sugar
  • 1 tsp. vanilla
  • 10 ice cubes

Directions

Combine first 5 ingredients in blender. Process at high speed add ice cubes, a few at a time blending until smooth.

Healthy Apple-Walnut Muffins

Ingredients

  • 2 cups flour
  • 1 tsp. baking soda
  • 1/4 tsp. ground cinnamon
  • 1/2 ground ginger
  • 1/4 tsp. ground allspice
  • 1 tsp. ground nutmeg
  • 1/4 rounded tsp. salt
  • 2 large eggs
  • 1 cup + 2 Tbsp. frozen, thawed apple juice concentrate
  • 2/3 cup buttermilk
  • 2 Tbsp. oat bran
  • 2 small Granny Smith apples, peeled, cored and chopped
  • 1/2 tsp. chopped walnuts

Garnish

  • 1 small granny Smith apple, peeled, cored, and cut into 12 thin slices

Directions

Preheat oven to 375 degrees F. Grease 12 standard size muffin cups or line with paper liners. Mix together flour, baking soda, cinnamon, ginger, allspice, nutmeg, and salt. Mix together eggs, apple juice and buttermilk. Stir flour mixture and oat bran into egg mixture until dry ingredients are just moistened. Do not overmix. Gently stir in chopped apples and nuts. Spoon batter into prepared pan, filling cups 2/3 full. Garnish each muffin with an apple slice. Bake muffins until lightly golden and tops spring back when pressed, 25 minutes. Transfer to wire rack to cool slightly . Turn muffins out onto rack to cool completely.

Peanut Banana Smoothie

Ingredients

  • 1 small banana, sliced
  • 2 Tbsp. peanut butter, creamy
  • 1 Tbsp. honey
  • 1 cup cold milk

Directions

Add peanut butter, banana and honey to blender and process until smooth. Add milk and blend until frothy. Serve immediately. Makes 1 1/2 cups.

Fantasy Cake

Ingredients

  • 1 package yellow cake mix
  • 1 can sweetened condensed milk
  • 1 container frozen strawberries in syrup, thawed
  • 1 container whipped topping, thawed

Directions

Prepare cake according to package directions. Bake in 9x13 inch baking pan. Cool. Poke holes in cake with the handle of a wooden spoon. Pour condensed milk evenly over cake and into holes. In a large mixing bowl, combine strawberries and whipped topping. Spread on top of cake and sprinkle with peanuts. Chill for 1 to 2 hours before serving.

Confetti Bars

These sweet and colorful bars are a hit with the kids. An eye-catching bar cookie for a bake sale or potluck.

Ingredients

  • 1 pkg. (18 oz.) Refrigerated Chocolate Chunk Cookie Bar Dough
  • 2 cups miniature marshmallows
  • 1 1/2 cups (about 4 oz.) milk chocolate-covered pretzels, broken into pieces
  • 1/3 cup rainbow sprinkles
  • 1/4 cup Semi-Sweet Chocolate Mini Morsels (optional)

Directions

PREHEAT oven to 350 degrees F. Grease a 13 x 9-inch baking pan.

Press cookie dough into prepared baking pan.

Bake for 13 to 15 minutes or until edges are golden brown. Sprinkle marshmallows over cookie; bake for an additional 1 to 2 minutes, or until marshmallows are puffed. Distribute pretzels, sprinkles and morsels over marshmallows; press down lightly. Cool completely in pan on wire rack. Cut into bars with wet knife.

Crab Spaghetti

Ingredients

  • 12 oz. fresh or frozen crab meat or imitation crab meat
  • 6 cloves minced garlic
  • 1/4 cup olive oil
  • 2 Tbsp. marg.
  • 2 Tbsp. fresh snipped basil (2 tsp. dried)
  • 1/3 cup dry white wine (may used cooking sherry)
  • 1 T soy sauce
  • 8-10 oz. package fettucini, or linguini, cooked & drained

Directions

Thaw crabmeat, if frozen. Drain well. Set aside. Cook garlic in med. saucepan in hot oil & marg. for 30 seconds. Add basil and cook for 1 min. Add white wine or cooking sherry and simmer for 5 minutes. Stir in crab meat & soy sauce. Heat through. Serve on top of hot pasta. Serves 4.

No Bake Cookie Clusters

Ingredients

  • 1 (12 oz) package white chocolate chips
  • 2 Tbsp. peanut butter
  • 1 1/4 cups rice krispies
  • 1 cup spanish peanuts
  • 1 cup mini marshmallows

Directions

Line cookie sheet with wax paper. In saucepan melt chips with the peanut butter over low heat stirring constantly. Let mixture cool slightly then stir in cereal and peanuts. Fold in marshmallows and drop by tablespoonfuls onto wax paper. Let cool until firm.

Chicken Parmesan Pasta Salad

Ingredients

  • 1 package Betty Crocker Suddenly Salad - caesar pasta salad mix
  • 1/4 cup mayonnaise
  • 1/4 cup milk
  • 2 cups cubed chicken (or turkey)
  • 1 medium cucumber, coarsely chopped
  • 1 medium tomato, coarsely chopped

Directions

Cook pasta mix as directed. Rinse with cold water, drain. In large bowl mix seasoning mix (from box) mayonnaise and milk. Stir in pasta and remaining ingredients. Toss with croutons and parmesan topping (from salad mix) refrigerate until chilled and serve.

With the heat steadily climbing, this is a great main course that is easy to make.

Buttermilk Biscuits

Ingredients

  • 2 cups flour
  • 1 Tbsp. baking powder
  • 3/4 tsp. salt
  • 1/2 tsp. baking soda
  • 5 Tbsp. chilled solid vegetable shortening
  • 1 cup buttermilk

Directions

Preheat the oven to 425 degrees F. In a large bowl, sift together flour, baking powder, salt, and baking soda. Using a pastry blender or 2 knives, cut the shortening into the flour mixture until coarse crumbs form. Add the buttermilk, tossing with a fork until a dough forms. Turn dough out onto a lightly floured surface. Gather into a disk.

Knead lightly a few more times just until smooth. Pat the dough to 3/4 inch thick. Using a biscuit cutter or a glass dipped in flour, cut out biscuits. place the biscuits, 2 inches apart, on an ungreased baking sheet. Gather dough trimmings, pat to 3/4 inch thick, and cut out more biscuits. Bake the biscuits until golden, 12-15 minutes. Serve hot.
