Peanut Brittle Cookies
- 1 box pie crust mix
- 1 egg slightly beaten
- 3/4 cup chopped peanuts
- 3/4 cup brown sugar
- 1/2 tsp. vanilla
Mix pie crust according to package directions but do not roll out. Cut in the brown sugar until mixture resembles coarse crumbs. Add egg, vanilla and 1/4 cup of the peanuts. Mix well. On well greased and floured cookie sheet, spread mixture to 12x12 inch square; press remaining 1/2 cup peanuts in dough. Bake at 350 degrees F for 15-20 minutes. Loosen edges. Cool on sheet; cut into 2 inch squares. Makes 3 dozen.
