Recipes Containing Cooked Beets
I hope someone can help me get some recipes for beets. My sister-in-law does not like pickled beets but does like cooked beets, if anyone has recipes for cooked beet dishes it would be appreciated.

Chicken And Rice Baked Casserole
I am looking for a chicken and rice baked casserole dish. Rice was cooked in covered pan in oven. Then chicken, broth, evaporated milk, tumeric, onions(?) were cooked on stove top. This was then poured over cooked rice and baked with grated cheese on top, with some green onions in the mix. Anyone have the recipe?

Today's Recipes
Southern Banana Pudding
Ingredients:
- 3 cups cold milk
- 2 pkg instant vanilla pudding-4 oz box
- 30 vanilla wafers
- 3 bananas (ripe)
- 1-8oz Cool Whip, thawed
Directions:
Pour milk into a large bowl,and add dry pudding mix. Mix well and let stand about 5 minutes. Arrange half of the wafers on bottom and sides of a 2 quart serving bowl. Add layers of half banana slices and pudding. Repeat all layers. Spread the topping over the pudding. Refrigerate until ready to serve.
Makes 14 servings. Preparation time: 20 minutes.

Blueberry Smoothie
Ingredients:
- 2 1/4 cups blueberries
- 2 nectarines
- 2 bananas, sliced
- 2 Tablespoons Brewer's yeast
- 1/4 cup orange juice
Directions:
In a blender or food processor, puree all items, adding a few ice cubes at a time. Serve immediately.

Bagel Dip
Ingredients:
- 1 pkg. cream cheese
- 1 carton sour cream (4 oz)
- 1 pkg. dried beef
- 1/4 tsp. garlic powder
- 2-3 green onions (chopped)
- 1 pkg. (6) frozen bagels (thawed)
Directions:
In food processor, blend all of the above ingredients (except bagels). Chill at least 2 hours. Toast bagels, cut into bite-sized pieces. Serve with the dip.

Baked Melon Alaska
Ingredients:
- 2 egg whites
- 1/4 cup sugar
- 1 1/2 cup mini marshmallows
- 2 cold cantaloupes, halved and seeded
- 1 qt. ice cream or sherbet
Directions:
Beat egg whites, gradually add sugar, beating til stiff. Fold in marshmallows. Fill cantaloupes with scoops of ice cream or sherbet. Cover melon with marshmallow meringue, spreading mixture to outside edge of fruit. Bake at 450 degrees F for 5 minutes.
Serves: 4

Veggie Casserole
Ingredients:
- 1 (16 oz.) bag chopped broccoli, cauliflower and carrots
- 1 can cream of mushroom soup
- 1 cup shredded Swiss cheese
- 1/3 cup sour cream
- 1/4 tsp. black pepper
- 1 can French fried onion rings
Directions:
Combine all ingredients except onion rings. Mix well and pour into a greased baking dish. Top with french fried onion rings. Cover and bake for 45 minutes.. Remove lid or foil and bake 10-15 minutes to allow onion rings to brown.
Can put 2 cups diced chicken in to make a complete meal.
(I made this last week, instead of the veggies it called for, I used a bag of chopped broccoli, a jar of pimento (for color) and odds and ends portions of frozen bagged veggies I had accumulating. It worked out great, my husband loved it!)

Frozen Cinnamon-Chocolate Dessert
Ingredients:
- 1 cup chocolate wafer cookie crumbs (about 20 cookies)
- 1/4 cup melted butter
- 1 qt (4 cups) cinnamon, vanilla, or chocolate ice cream, slightly softened
- cinnamon chocolate sauce(below)
Directions:
Mix cookie crumbs and butter, press into 9 inch pie pan.
Freeze 10 minutes.
Spoon ice cream into crumb crust, smooth top. Cover and freeze till firm.
Cinnamon-Chocolate Sauce
Ingredients:
- 1/2 cup heavy whipping cream
- 1/4 cup sugar
- 1 oz unsweetened baking chocolate
- 1/2 tsp. cinnamon
Directions:
Heat whipping cream, sugar and chocolate until boiling over medium heat, stirring constantly.
Boil about 30 seconds until chocolate is melted, remove from heat stir in cinnamon serve over cooled pie.

Mint Ice Tea
Ingredients:
- 3 peppermint flavored tea bags
- 7 cup boiling water
- 1 cup cranberry juice
- 3/4 cup pink lemonade concentrate
Directions:
Steep tea bags in boiling water for 5 minutes. Discard tea bags
pour tea into pitcher add cranberry juice and lemonade concentrate
cover and refrigerate overnight.

Broccoli and Noodle Supreme
Ingredients:
- 3 cup uncooked egg noodles
- 2 cup broccoli florets
- 1 can (10 3/4 oz) cream of chicken and cream of broccoli soup
- 1/2 cup sour cream
- 1/3 cup parmesan cheese
- 1/8 tsp. pepper
Directions:
In saucepan cook noodles according to directions.
Add broccoli during the last 5 minutes of cooking, drain and set aside.
In same pan combine the soup, sour cream, parmesan cheese and pepper. Cook and stir until heated through over low heat. Add noodles and broccoli to pan to mixture. Stir until coated.

Butterscotch Ice Cream
Ingredients:
- 1 Quart vanilla ice cream, softened
- 1/2 cup butterscotch flavored morsels
- 1/2 cup toasted walnuts
- 1/2 cup toasted coconut
Directions:
In a large bowl, combine soft ice cream and other ingredients. Mix well. Pour into air tight container, freeze till firm.
Makes: 1 Qt.

Baked Bananas
Ingredients:
- 2 bananas
- lemon juice
- brown sugar OR granulated sugar with cinnamon
- butter
Directions:
Peel bananas and slice in 1/2 lengthwise. Place in a buttered pie plate. Sprinkle with lemon juice and your preference of sugar. Dot with butter. Bake at 350 degrees for 15 minutes.
Can also do with apples or pears.

Zucchini Pineapple Cake
Ingredients:
- 3 eggs
- 2 cup sugar
- 2 tsp. vanilla
- 1 cup cooking oil
- 2 cup zucchini, peeled and shredded
- 3 cup all purpose flour
- 1 tsp. baking powder
- 1/2 cup raisins
- 1 tsp. salt
- 1 cup chopped nuts
- 1 cup crushed pineapple, drained
Directions:
Beat eggs till fluffy; add sugar, vanilla, oil and zucchini. Blend well. Add dry ingredients and mix well. Stir in pineapple, raisins and nuts. Can bake in 1 large greased and floured loaf pan or 2 smaller loaf pans. Bake in 325 degree oven for 1 hr. Cool on wire rack. When cool, wrap in foil to store.
