Grilled Chicken Tacos with Lime

I call these "tacos" but they are put together more like fajitas. The chicken is also delicious cooked fajita style if you don't want to grill them.

Ingredients

  • 2-3 large chicken breasts, pounded to a uniform thickness
  • The juice of 2 limes (1/4 cup)
  • 1/4 cup oil (olive, by preference)
  • 1 Tbsp. turbinado sugar (Sugar in the Raw) or honey
  • 5 or 6 cloves of garlic, minced
  • Handful of chopped cilantro (1/4 cup)
  • 1 hot pepper, minced (Optional, use whatever pepper you like best, we used Serranos)

Directions

Combine ingredients, mix well and pour over flattened chicken breasts, turn to coat. Marinate in the refrigerator as long as possible, preferrably overnight. Grill on charcoal for best flavor, 5 to 7 minutes per side. Let rest 5 - 10 minutes with foil over plate. Cut across breast into strips. Serve with warm tortillas and your favorite taco fixings. We had shredded cheese, black beans, more cilantro and limes to squeeze, hot sauce, lettuce, tomatoes, sour cream and fresh pico de gallo (recipe follows).

Pico de Gallo

Ingredients

  • 2-3 tomatoes, seeded and chopped
  • 1 bunch green onions, chopped
  • 3-4 garlic cloves, minced
  • 1 hot pepper, minced (Optional, use whatever pepper you like best, we used Serranos)
  • 3-4 drops of Tabasco or hot sauce
  • Handful of chopped cilantro (1/4 cup)
  • The juice of 1 lime(1/8 cup)

Directions

Mix together and refrigerator. Serve with tacos, chips or any mexican dish where you might use salsa.

Quick Apple Dessert

Ingredients

  • 2 cans (16 to 20 ozs.) apple pie filling
  • 1 box yellow cake mix (regular size)
  • 1 cup chopped nuts, your choice
  • 1 (20 oz.) can crushed pineapple, undrained
  • 2 sticks margarine

Directions

Pour pie filling into a 9 x 13 inch baking dish. Spoon pineapple on top of pie filling. Sprinkle dry cake mix over fruit. Slice margarine and place over the cake mix. Sprinkle nuts over top. Bake at 350 degrees F for 30 to 40 minutes.

Nana's Peanut Butter Fudge

Ingredients

  • 4 Tbsp. butter
  • 1/2 cup brown sugar
  • 1/4 cup warm water
  • 1 cup oatmeal
  • 1 1/2 cup confectioners sugar

Directions

Melt butter, peanut butter and brown sugar over low heat, stirring often. Add warm water, oatmeal and confectioners sugar. Mix well and pour in 8x8 pan. Refrigerate till hard.

15 Minute Chicken Vegetable and Rice Dinner

Ingredients

  • 4 skinless, boneless chicken breast halves
  • 1/4 tsp. garlic powder
  • 1 Tbsp. vegetable oil
  • 1 can cream of chicken soup
  • 1 1/2 cup water
  • 1/4 tsp. pepper
  • 1 1/2 cup uncooked instant rice
  • 2 cup thawed frozen vegetable combination (such as broccoli, cauliflower and carrots)

Directions

Sprinkle chicken with garlic powder. In skillet over medium high heat, heat oil. Add chicken and cook 8 minutes or until browned. Set chicken aside. Pour off fat. Add soup, water and pepper. Heat to a boil. Stir in rice and veggies. Place chicken on rice mixture. Cover and cook over low heat 5 minutes or until chicken is done. Serves 4.

Vegetable Pizza

Ingredients

  • 3 cups frozen mixed veggies
  • 1 pizza crust, about 12 inches
  • 1 1/2 cups shredded mozzarella cheese
  • Dried oregano, basil or Italian seasoning

Directions

Preheat oven according to directions on pizza crust package. Rinse vegetables in colander under warm water. Drain well; pat with paper towel to remove excess moisture. Spread crust with half of cheese and all the veggies. Sprinkle with herbs; top with remaining cheese. Follow baking directions on pizza crust package; bake until hot and bubbly.

Brownies - Tips and Recipes

Quick and Easy Brownies

Oven: 350°

Ingredients

  • 1/2 Cup Butter
  • 6 Tbsp. Cocoa
  • 2 Tbsp. Oil
  • 1 Cup Sugar
  • 1/2 Cup Flour
  • 1 tsp. Baking Powder
  • 1 tsp. Vanilla
  • 2 Eggs
  • 1 Cup Chopped Nuts (optional)

Directions

Melt butter in medium sauce pan over low heat. Remove from heat and add cocoa and oil; stir. Add sugar and flour; stir after each addition. Add vanilla, baking powder and eggs. Add chopped nuts if desired. Pour into greased and floured 9x9x2 baking pan and bake for 25-30 minutes. Brownies are done when a toothpick inserted near the center comes out clean. Cool slightly and cut into 16-24 pieces.

I often bake these in a 8x12 pan so the brownies come out thicker. They are real moist. My hubby can eat a pan by himself!

Brownies and Topping

  • 1 cake mix (yellow, chocolate, etc.)
  • 2 eggs
  • 1 stick margarine (soft)
  • 1 pkg. cream cheese (soft)
  • 3 cup powdered sugar

Mix cake mix, eggs and margarine well; pat into 9x13 greased pan. Mix cream cheese and powdered sugar well. Put on top of cake. Bake at 350 degrees for 40 minutes.

Quick Brownies

Ingredients

  • 2 sticks margarine
  • 3 Tbsp. cocoa
  • 1 cup water
  • 2 cup sugar
  • 2 cup flour
  • 1/4 tsp. flour
  • 2 eggs (beaten)
  • 1/2 cup buttermilk
  • 1 tsp. soda
  • 1 tsp. vanilla

Directions

Mix together and bring to rapid boil the margarine, cocoa and water. Pour over the remaining ingredients. Bake at 350 degrees for 20 minutes in greased cookie pan.

Brownies

Ingredients

  • 1 stick margarine
  • 1 cup sugar
  • 1 can Hershey syrup
  • 1 cup flour
  • 4 eggs
  • Pinch of salt

Icing:

  • 6 Tbsp. margarine
  • 1 1/2 cup sugar
  • 6 Tbsp. milk
  • 1/2 cup chocolate chips

Directions

Cream margarine and sugar. Add Hershey syrup, flour, eggs and salt. Put in greased jelly roll pan. Bake in preheated oven at 350 degrees F for 25 minutes.

For icing: Combine, margarine, sugar and milk; boil for 1 minutes. Add chocolate chips and beat with a whisk until cool. Spread.

Chocolate Glazed Brownies

Ingredients

  • 6 squares semi-sweet chocolate
  • 2 Tbsp. margarine or butter
  • 1/4 cup corn syrup
  • 2 tsp. milk
  • Walnuts (opt.)

Directions

Prepare and bake One-Bowl Brownies as directed (see recipe below). Microwave chocolate and margarine in bowl on high 2 minutes or until chocolate is almost melted. Stir until chocolate is completely melted. Stir in corn syrup and milk until well blended. Spread over brownies. Let stand 1 hour. Garnish with large walnut pieces.


One Bowl Brownies

Ingredients

  • 4 squares unsweetened chocolate
  • 3/4 cup margarine or butter
  • 2 cups sugar
  • 3 eggs
  • 1 tsp. vanilla
  • 1 cup flour
  • 1 1/2 cups chopped walnuts (opt.)

Directions

Heat oven to 350 degrees F. Microwave chocolate and margarine in large bowl on high 2 minutes or until margarine is melted. Stir until chocolate is completely melted. Stir sugar into chocolate until well blended. Mix in eggs and vanilla. Stir in flour and walnuts until well blended. Spread in greased foil lined 9x13 pan. Bake 30-35 minutes or until toothpick inserted in center comes out with fudge crumbs. Do not overbake! Cool in pan. Cut into squares.
