Vegetarian "Chicken" Salad

Hello all! I'm having a great time at this site! It's awesome to be able to share some of my vegetarian ideas. My youngest daughter and I don't eat meat, but still like the taste and idea of chicken bits in a salad. What I came up with is to purchase our favorite vegy "chicken" patties, make our salad, heat up the patties, cut them in cubes, and toss in the salad. This has worked great, and is a favorite now!

Someone brought this salad to a get together and I didn't think much of it until I tasted it. Everyone loved it.

HEALTHY BEAN SALAD
Dressing:
2 TBLS olive oil
1/4 cup red wine vinegar
2 tsp sugar
1tsp lemon juice
1 clove garlic, chopped

SALAD
1 can black beans, drain & rinse
1 can white corn nibets
1 cup chopped red pepper
1/2 cup chopped red onion.
Mix dressing ingredients and toss over bean mixture.
Marinate in frig for couple hours, or overnight.

I like to use them in wrap sandwiches and to make 'chicken' parmesan.
