A delicious cake with apple and lovely lemon icing which gives it a special flavour. One of my favourites.
Ingredients:
4 oz. butter or margarine
4 oz. sugar
4 oz. all-purpose flour
4 oz. corn flour
1 tsp. baking powder
2 eggs
Apple Mix:
3 apples, peeled and grated
grated rind of 1 lemon
2 Tbsp. sugar
Icing:
8 oz. icing sugar (powdered sugar)
juice of 1 lemon
1 tsp. ground cinnamon
Directions:
Cream butter and sugar. Add well beaten eggs, and then stir in lightly sifted flour, cornflour and baking powder. Using tray which has been greased or lined with baking paper, spread 1/2 mixture into prepared tin.
Cover with apple mixture which has been previously prepared and mixed together. Top with remainder of cake mixture, spreading with a knife (dipped in hot water if necessary to make easy to spread).
Bake 20-30 minutes in moderate oven (350 degrees F).
When cool, ice with icing which has been flavoured with the lemon juice. Sprinkle with cinnamon. Cut into squares to serve. Can serve with a scoop or cream or ice cream if having as dessert. Yummy!
Beat sugar and eggs together for 3 minutes. Add oil. Add remaining dry ingredients; beat on high for two minutes. Add the apples, raisins, and nuts. Pour into greased and floured 9x13 inch pan.
In a bowl, mix together the topping ingredients and sprinkle on the top of the cake before baking.
