1 tsp. vanilla
Directions
Add the dry ingredients to the creamed mixture and alternately mix in 1/2 cup cold coffee.
Grease 8x8 pan. Preheat oven to 350 degrees.
Bake for 40-45 minutes.
Frosting: Heat on low until mixture thickens (or is completely mixed). Add powdered sugar until smooth and a good spreading consistency.

Apple Cake II
Ingredients
- 2 cups sugar
- 2 cups flour
- 1 t. cinnamon
- 2 tsp soda
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 4 cups chopped apples
- 1/2 csp oil or soft butter
- 2 eggs
Directions
Mix all dry ingredients together. Add apples and mix. Add oil and eggs; mix. Bake at 325 for 1 hour in a 9x13 pan. Very good served with a little Cool Whip.

Apple Cake III
Ingredients
- 2 cups sugar
- 2/3 cup shortening
- 2 eggs
- 2 cups flour
- 2 scant tsp. soda
- 1 tsp. vanilla
- 1/2 cup nutmeats
- 1 tsp. salt
- 5 cups diced apples (stir in)
Combine ingredients and bake for 1 hour at 325 degrees F.
Serve with Butterscotch Sauce:
Ingredients
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1/4 cup cream
- 1 tsp. vanilla
Directions
Cook only until sugars dissolve. Can also be served with whipped topping.

Apple Cake IV
Ingredients
- 3 cups flour
- 1-1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 2 eggs
- 1-3/4 cup sugar
- 1/2 cup brown sugar
- 1-1/4 cup vegetable oil
- 2 tsp. vanilla
- 3 Granny smith apples, peeled and chopped
- 1 cup chopped pecans or walnuts
Directions
Sift together flour, soda, salt and cinnamon. Beat eggs and sugars until creamy. Add oil and vanilla, beating until smooth. Add dry ingredients and mix until stiff dough forms. Stir in apples and nuts. Pour into a greased and floured tube pan, 13x9x2 inch pan or 2 loaf pans. Bake at 350 degrees F for 1 hour, or until done. This is very moist. Serves 16
