- 2 1/2 cups cooked carrots
- 1 Tbsp. minced onion
- 3 Tbsp. melted butter
- 3 eggs, separated
- 1 cup dry bread crumbs
- 2 cups milk
- salt and pepper, to taste
Mash cooked carrots, add onion, butter, beaten egg yolks and seasoning. Add crumbs and milk. Fold in beaten egg whites last. Pour into greased loaf pan. Bake at 350 degrees F for 45 minutes. Can be served with your favorite cheese sauce, if you like.
