Cherry Mini Pound Cakes

Ingredients

  • 2 (16 oz) jars of maraschino cherries
  • 1 1/4 cups butter, softened
  • 2 3/4 cups sugar
  • 5 eggs
  • 1 tsp. vanilla
  • 3 cups flour

  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 (14 oz) can sweetened condensed milk
  • confectioners sugar

Directions

Drain cherries, cut into quarters. You should have about 2 cups. Drain again on paper towels. Set aside. Put butter, sugar, eggs and vanilla in mixing bowl. Beat with mixer until mixture is well blended on low speed. Then on high speed additional 5 minutes until light and fluffy. Combine flour, baking powder and salt. Add to batter mixture alternating with condensed milk to cream the mixture. Mix lightly after each addition. Add in cherries. Stir well and pour into greased and floured mini loaf pans.

Bake at 350 degrees F for 45-50 minutes or until toothpick inserted into center comes out clean. Let cool in pans for 5 minutes then invert onto wire racks to cool completely. Wrap for gifts or dust with confectioners sugar and serve.
