Eggs a la Golden Rod

This is one of my eldest daughter's favorites! She often makes it for her husband.

Ingredients:

  • 2 hard-boiled eggs
  • 1 cup milk
  • 2 Tbsp. flour
  • 2 Tbsp. margarine
  • 2 slices of toast
  • salt and pepper, to taste

Directions:

Boil eggs until hard, about 10 minutes in full rolling boil. Make white sauce with margarine, flour and milk. Cook until thick. Stir in chopped egg whites, salt, and pepper, to taste. Pour over toast; top with egg yolks mashed through a sieve. Makes 2 servings.
