Maraschino Cherry Cake
Ingredients
- 1/2 cup butter or margarine
- 1 3/4 cups sugar
- 16 maraschino cherries
- 1/2 cup nuts
- 2 3/4 cups cake flour
- 3 tsp. baking powder
- 1/4 tsp. salt
- 1/4 cup cherry juice
- 1/2 cup milk
- 4 egg whites
- 1/4 tsp. almond flavoring
Directions
Cream butter or margarine and sugar together until like whipped cream. Chop cherries and nuts and sprinkle half of the sifted flour, baking powder and salt over them. Add liquid to creamed butter and sugar alternately with the flour that has not had the cherries and nuts added. Then add remaining flour that has been mixed with the cherries and nuts. Fold in stiffly beaten egg whites to which flavorings have been added. Turn into two 8 inch greased and floured layer pans. Bake at 350 degrees F for approximately 30 minutes.

Gingersnap Pie Crust
Ingredients
- 1 cup finely crushed gingersnap crumbs
- 2 Tbsp. sugar
- 1/3 cup soft butter or margarine
Directions
Combine crumbs, sugar, butter or margarine and mix thoroughly. Press into bottom and sides of 9 inch pie pan. Place in refrigerator until firm. Chiffon-type pies are delicious in this crust.

Turkey Rice Soup
I freeze leftover chopped turkey at Thanksgiving and make this soup a couple of months later. Chicken would be just as good. My kids love this simple soup.
Ingredients
- 1 Tbsp. olive oil
- 1 cup carrots, sliced into coins or chopped
- 1 stalk celery, chopped
- 1 cup onion, chopped (about 1/2 large onion)
- 1 clove garlic, minced
- 1 cup chopped turkey
- 2 quarts chicken broth (or turkey if you have it!)
- 1 cup cooked rice (a great use for leftover rice)
- Salt, pepper and thyme to taste
Directions
In a large soup pot or dutch oven, saute garlic, onions, celery and carrots in oil until onions are translucent. Add chicken broth and bring to a boil. Reduce heat, cover and simmer for at least 30 minutes. Add turkey and rice and heat through before serving, 15 minutes or so.

Chicken and Dumplings Casserole
Ingredients
- 2 cups sifted flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1/4 cup shortening
- 1 cup milk
- 1 can mushroom pieces, drained
- 1 cup diced, cooked chicken
- 2 Tbsp. chopped onion
- 1 package frozen peas, cooked and drained
- 1 can cream of mushroom soup
Directions
Sift together the dry ingredients. Cut in the shortening. Blend in 3/4 cup of the milk. Roll out on a floured board or pastry cloth into 12x18 inch rectangle. Cut into 6 squares.combine the mushrooms, chicken, onion, 1 cup of the peas and 1/2 of the soup. Place by tablespoonfuls in the center of the biscuit squares. Bring the corners of the dough up so that they lap over each other, then press the edges together to seal. Place in a greased 9x13 pan and bake in a 425 degrees F oven for 15-20 minutes, or until biscuits are done.combine the rest of the soup, milk and peas to serve hot over the dumplings.

Super Oatmeal Cookies
Ingredients
- 1 cup flour
- 1 tsp. cinnamon
- 1/2 tsp. each baking powder, baking soda, and salt
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/3 cup applesauce
- 1 egg
- 2 tablespoons margarine, softened
- 1 tsp. vanilla
- 1 1/2 cups quick oats
- 3/4 cup raisins
- 1/2 cup chopped walnuts
Directions
Combine the sugars, applesauce, egg, margarine, and vanilla in a large mixing bowl. Mix in the flour, baking powder, baking soda, salt, cinnamon, quick oats, raisins, and chopped walnuts. Preheat oven to 350 degrees F. Drop dough by teaspoonfuls onto a baking sheet. Bake 10 to 12 minutes. Remove from baking sheet and cool before eating.

Basil-Feta Pasta Salad
This makes a large salad for a potluck. If you want this for a dinner salad for a family, I would halve the ingredients.
Ingredients
- 1 package pasta (1 lb.), any kind - I like farfalle and penne for salads
- 2 cups basil for pesto + 1 cup, sliced into thin strips
- 1 cup shredded or grated parmesan
- 1/2 cup pine nuts + 1/4 cup for topping
- 1/2 cup olive oil
- 2 cloves minced garlic
- Salt and Pepper
- 1 package (8 oz) crumbled feta
- 2 cups cherry tomatoes, halved
Directions
Cook pasta according to package directions. While this is cooking (or ahead of time), make pesto by placing basil, pine nuts, parmesan, garlic and olive oil in a food processor and mixing thoroughly (If using a blender, chop basil first and add slowly or the blender will get jammed up). Add salt and pepper to taste. The pesto should be mixed well and be a brilliant green color.
Brown 1/4 cup of pine nuts in a little olive oil with salt and pepper until golden. Drain pasta when done and rinse using cool water to stop cooking. Toss pesto and pasta together in large bowl, add pine nuts, basil strips, tomatoes and feta and toss. This salad is best if left to "set" for a couple of hours or even overnight. Before serving, add salt and pepper and more olive oil if the salad looks dry.
If you don't like feta, you could simply substitute shredded parmesan or your favorite cheese instead. Feel free to use bottled pesto as a timesaver or add grilled chicken for a hearty meal.

Sunday Night Ham Sandwiches
Ingredients
- 1 cup ground cooked ham
- 1/4 cup pickle relish
- 1/4 cup chopped celery
- 1 hard-cooked egg, chopped
- 3 Tbsp. mayonnaise
Directions
Combine ingredients and spread on bread. This makes a good sandwich filling that everyone seems to enjoy. Bologna can be used as a substitute for regular ham.
