Grilled Tomatoes

Just recently got our tomato plants in. Love tomatoes and this recipe is great!

Ingredients:

  • 2 medium tomatoes
  • salt, to taste
  • pepper, to taste
  • cayenne pepper, to taste
  • butter
  • bread crumbs

Directions:

Cut tomatoes in halves. Sprinkle with salt, pepper and cayenne pepper; dot with butter and sprinkle with bread crumbs. Arrange cut side up on barbecue rack. Cook until crumbs are brown and tomatoes are tender.

Deeli's Grilled Tomatoes

I've checked out oodles of grilled tomato recipe ingredients online and here are the combinations and amounts that have ended up suiting my taste. I am considering switching out the herbs with finely diced jalapenos as a garnish one of these days just for fun ;-) One tomato serves two as a side dish.

Ingredients:

  • 1 large ripe firm tomato, halved lengthwise
  • 1/2 tsp. crushed or minced garlic
  • 1 tsp. extra virgin olive oil
  • salt and pepper, to taste
  • 2 Tbsp. mozzarella or Monterrey jack cheese, finely shredded
  • finely chopped fresh basil, chives, or cilantro for garnish

Directions:

Preheat grill to medium and lightly oil the grate.

Evenly spread the garlic over the cut sides of the tomatoes, drizzle with olive oil, and sprinkle with salt and pepper.

Grill tomatoes, cut sides down, until grill marks show, about 3 minutes, turn tomatoes over, sprinkle with cheese and continue to grill for about 2 to 3 minutes, garnish with herbs and serve.
