Lemon Souffle Cookie Bars

Preheat oven to 350 degrees F. Pat out in 8x8 inch well-greased pan:
  • 1 stick butter or margarine
  • 1/4 cup powdered sugar
  • 1/2 tsp. salt
  • 1 cup flour
Bake for 12 minutes.

Meanwhile: Beat 2 eggs slightly, add 2 Tbsp. each of flour and lemon juice. Stir in 1 cup granulated sugar. Pour this mixture over hot dough; return to oven and bake 25 minutes more. Remove from oven. Sprinkle with 2 Tbsp. powdered sugar or make a mixture of butter, powdered sugar, and lemon juice and use as a thin glaze. Let set for 24 hours before cutting.
