Trash Can Punch

I've been looking at Trash Can punch recipes, but me and my friends enjoy a basic screwdriver. I want it more interesting for a party this weekend. I want to add fruit just like trash can punch. I don't care to have Everclear in it, I would prefer regular vodka. Has anyone ever tried it with just orange juice or should I add pineapple or some other tropical juice? Please respond, ASAP. Freezing Meals Containing Cream Soups

I am expanding what I cook to put in the freezer and have a few questions.

  1. Can I freeze soups that have canned cream soups in them?
  2. Can I freeze a casserole (like rice/chicken) that has canned cream soup in it?
  3. Can I freeze chicken and dumplings?

We don't make a lot with the cream soups, but we do like the sauce it makes. I've found 98% fat free /low sodium ones at Wal-mart for about 80 cents a can. Thanks so much.

Anchor Tea Bags With a Clothespin

While making tea, the "end papers" kept getting to close to the burner. So I used a clothespin to anchor them in place. Afterward, I opened the tea bags and put them in with the coffee grounds to put on the roses and in the garden.

Festive Berry Parfaits

These parfaits can be made in any type of glass or stemware. I used my drinking glasses in this photo. You can use any combination of fruit, yogurt and granola. If you're in a less-than-healthy mood, then by all means go for the pudding and whipped cream!

Parfaits in Photo: Blueberries and strawberries between layers of vanilla yogurt. Parfait is topped with the green, leafy stem of a strawberry.

Today's Contest Recipes:

Grilled Citrus Cod, Halibut or Tilapia

Healthy, quick and easy :-)

Ingredients:

  • 1 lb cod, halibut or tilapia filets
  • 1 1/2 tsp. minced garlic
  • 2 lemons, quartered (or 6 Tbsp. concentrate)
  • 2 limes, quartered (or 4 Tbsp. concentrate)
  • fresh chives, chopped, if desired

Directions:

Heat grill to medium-high.

Squeeze lemon and lime juice in to a small bowl. Add garlic and whisk.

Pour part of the mixture in to an aluminum foil boat. Add the fish and pour the rest of the liquid over the fish, top with chives if desired, wrap foil and close loosely.

Grill for 10 to 15 minutes or until fish easily flakes with a fork.

Recipes Using Yellow Summer Squash

Here are ways to make use of excess Squash and Zucchini. This time of year the garden always produces more than you can use and give away. I hate to wasted so I have several tasty uses listed below in addition to the tried and true zucchini bread recipes.

Summer Chicken Pasta

Dice one zucchini, one squash and one onion. Saute with a tablespoon of olive oil and a clove of minced garlic. Salt and pepper to taste, add hot pepper flakes if desired (or 2 dried hot peppers) and additional garlic powder, if needed.

At this point you can allow to cool, place in a quart freezer bag, press out air and freeze for later use. Repeat for all remaining squash and zucchini

OR continue by adding fresh tomatoes or one LARGE jar of diced tomatoes and one small can of tomato sauce.

Grill chicken breasts, cook pasta and serve.

A light, fresh and delicious summer meal. My children (ages 11 and 17) love this pasta sauce.

Tortellini With Vegetables

Cube a zucchini, saute in a tsp of olive oil with an onion if desired and a clove of minced garlic. Add fresh tomatoes (skin and seeds removed). Lightly saute. Add one jar of store bought Alfredo sauce and hot pepper flakes to taste. Serve over cheese tortellini and toss with grilled chicken or shrimp if desired. OR for a different flavor, mix in some diced ham instead.

This is a quick weeknight dinner and is loved by all the kids in the family.

Zucchini and Squash Marinara

Cut squash in half lengthwise. Slice. Saute with a bit of olive oil. Slice an onion and add to pan. When all are wilted to desired tenderness, add canned marinara sauce. You can add as little or as much sauce as your family prefers.

This is a nice side dish and can be served over rice or pasta if desired. It is a good accompaniment to Chicken Parmesan or grilled Italian sausages.

Freezer Squash

Lastly, I slice the remaining quash, blanch in boiling salted water for 3 minutes, drain and layer in freezer containers for use in the winter. These get a bit soggy but are OK for frying in bacon grease for a taste of summer or for use in soups and casseroles.

Sweet Molasses Peach Pie

My late Grandmother Helen, she loved to cook and she was from Finland. She would make the the most goodness things to eat and I just miss her cooking. She past on June 22, 1998. I miss you Grandma Helen!

Ingredients:

  • 4 cups of stiffed flour
  • 2 cups of Crisco
  • 1 tsp. of cinnamon
  • 2 tsp. of coffee (reg or decaf, brewed)
  • 5 cups of fresh or canned peaches (diced in small pieces, toddler size bites)
  • 3 tsp. of tap hot water
  • 1 tsp. of Cajun spices
  • 1/3 cup of butter (soft and melted)

Directions:

Bake at 350 degrees F. Mix all the stuff together in a big bowl and put in 2 shell pie pans and put in the oven, bake at 35 minutes or brown crust and let stand until cool. What you don't eat, put in the refrigerator.

Servings: 6
Time:15 Minutes Preparation Time
35 or brown crust Minutes Cooking Time

Pork and Bean Salad

This salad is great at fish frys. We cannot eat seafood without this.

Ingredients:

  • 1 large can of Pork and Beans
  • 2 boiled eggs (chopped)
  • 1/4 to 1/2 cup chopped sweet pickles
  • 1 Tbsp. chopped pimento
  • small amount of mayo or Miracle Whip

Directions:

Drain beans. Add eggs, pickles, pimento. Add mayo to consistency you desire. Easy to alter if you like more pickles or more eggs.

Servings: 6
Time:20 Minutes Preparation Time
5 for eggs Minutes Cooking Time

Robin's Recipe Corner:

Pizasagna

Great kid-friendly dish!

Ingredients:

  • 1 lb. ground beef
  • 1 cup tomato sauce
  • 1 pkg. pizza seasoning mix
  • 1/2 tsp. salt
  • 1 cup ricotta or cottage cheese
  • 1 pkg. crescent rolls
  • 2 Tbsp. Parmesan cheese
  • 2 cup grated mozzarella cheese

Directions:

Brown ground beef and drain. Stir in tomato sauce, seasoning mix and salt. Simmer while preparing dough. Separate can or crescent dough into two large rolls. Place rectangle into bottom of greased 9x9 inch baking dish. Spoon 1/2 of the hot meat mixture in pan. Cover with the dry cottage cheese. Spoon on remaining meat mixture over remaining dough rectangle. Sprinkle with grated cheese and the Parmesan cheese. Bake at 425 degrees F for 15-20 minutes until golden brown. Cut into squares to serve.

Virginia Batter Bread

Ingredients:

  • 1/2 cup cornmeal
  • 1/2 tsp. soda
  • 1/2 tsp. baking powder
  • 1 cup buttermilk
  • 1 egg, slightly beaten
  • 2 Tbsp. butter, melted
  • 1 tsp. salt

Directions:

Mix dry ingredients; add buttermilk and egg. Add melted butter. Bake in buttered casserole about 25 minutes at 425-450 degrees F. After the first 5 minutes in the oven, pierce the top with a fork to break the crust. Serves 4.

Ground Beef and Noodle Casserole

Ingredients:

  • 1 lb. ground beef
  • 2 cups raw noodles
  • 1 can tomato soup
  • 1 small onion
  • 2 Tbsp. butter
  • 1 small can corn niblets
  • 12 ripe olives
  • 1 cup grated cheese
  • 1 cup water

Directions:

Mince and fry onion in butter, add meat and brown. Add soup, water, then the raw noodles; cover and simmer for 15 minutes. Add corn, chopped olives and 1/2 cup cheese; salt to taste and place in casserole. Top with remaining cheese and bake for 45 minutes at 350. Additional water may have to be added.

Luscious Apricot Bars

Ingredients

  • 2/3 cup dried apricots
  • 1/2 cup soft butter or margarine
  • 1/4 cup granulated sugar
  • 1 cup sifted flour
  • 1/3 cup flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 cup brown sugar
  • 2 eggs, well beaten
  • 1/2 tsp. vanilla
  • 1/2 cup chopped nuts
  • powdered sugar

Directions

Rinse apricots; cover with water. Boil 10 minutes; drain, cool and chop. Grease 8x8 inch pan. Mix butter, granulated sugar, and 1 cup flour till crumbly. Pack into pan. Bake 25 minutes at 350 degrees F until lightly browned. Sift together 1/3 cup flour, baking powder, and salt. Beat brown sugar into eggs. Add sifted flour mixture; mix well. Mix in vanilla, nuts and apricots. Spread over baked layer. Bake 30 minutes at 350 degrees F. Cool in pan; cut into squares. Roll in powdered sugar.
