Making Yogurt Without Soy or Animal Milk

Does anyone know if it is possible to make yogurt from any kind of milk other than animal or soya? I have tried to make it from rice milk but it didn't work. Any ideas? I cannot have soy or dairy (including goat's milk).

Today's Recipes


Creamy Caramels

Ingredients

  • 1 cup sugar
  • 1 cup dark corn syrup
  • 1 cup butter or margarine
  • 1 can sweetened condensed milk
  • 1 tsp. vanilla extract

Directions

Line an 8 inch square pan with foil and butter the foil; set aside. Combine sugar, corn syrup and butter in a 3 qt. saucepan. Bring to boil over medium heat, stirring constantly. Boil for 4 minutes without stirring. Remove from the heat and stir in milk. Reduce heat to medium low and cook until candy thermometer reads 238 degrees F (soft ball stage), stirring constantly. Remove from the heat and stir in vanilla. Pour into prepared pan; cool. Remove from pan and cut into 1 inch squares. Wrap individually in waxed paper; twist ends.

Almond Bark Candy

Ingredients

  • 1 1/2 lb. almond bark
  • 1 cup peanut butter
  • 3 cups Rice Krispies
  • 1 cup miniature marshmallows

Directions

Melt the almond bark in a crock pot turned on low. When it is melted, stir in the rest of the ingredients; stir and drop by teaspoonfuls on waxed paper.

Mounds Candy Bars

Ingredients

  • 3/4 cup mashed potatoes
  • 1 lb. flaked coconut
  • 1 lb. powdered sugar
  • 1 tsp. vanilla
  • Chocolate almond bark for coating (melted)

Directions

Combine all ingredients except chocolate coating; drop by heaping teaspoonfuls on waxed paper. Roll into balls or oblong shape; refrigerate 1/2-1 hour. If mixture is too soft to form balls or shape, refrigerate first then shape. Dip formed candy in coating that has been melted, turning to coat on all sides. Keep chocolate over hot water while dipping candy. With tongs or fork, lift candy out of chocolate onto waxed paper. Place candies in refrigerator to harden.

Tootsie Rolls

Ingredients

  • 2 oz. unsweetened chocolate (melted)
  • 2 Tbsp. margarine (melted)
  • 1/2 cup light corn syrup
  • 3/4 cup powdered milk
  • 1 tsp. vanilla
  • 2 cups powdered sugar

Directions

Mix chocolate, margarine, corn syrup, and vanilla. Add dry ingredients and knead slowly. You can add more powdered sugar if necessary, up to 1 1/2 cup. Make into tootsie rolls and wrap.

Caramelized Crispix

Ingredients

  • 2 sticks margarine
  • 2 cups brown sugar
  • 1/2 cup white sugar
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1 box Crispix

Directions

Boil the margarine, brown sugar, syrup and salt for 1 1/2 minutes. Add baking soda. Pour over the cereal in a glass or microwave dish. Cook in microwave for 4 minutes. Stir after each minute. Spread on cookie sheet to cool. Mix with peanut M&M's.

Vi's Vegetable Beef Soup

Directions

1-2 pounds stew beef browned in large skillet with 1 large onion , chopped

3-4 garlic cloves with 2-3 tablespoons olive oil. After meat is really browned add 1 cup water to loosen the meat drippings -- add that to the soup pot.

Add about 1/3 - 1/2 jar of beef base to 1 gal. water and 2 cans beef broth (or you can use chicken broth) simmer:

While you peel and slice 1 or 2 lbs. fresh carrots and steam them in another small pot.

To the meat pot when stew beef is almost tinder.

Add:

  • 4-6 large potatoes - Diced bite size
  • 1-2 large onions - large chopped pieces
  • 3 cans diced or stewed tomatoes with juice
  • 1 or 2 cans beans - I used Kidney beans and Pork and Beans
  • 1 or 2 cans cut corn
  • 2-3 stalks celery - Diced
  • 2 cans green beans
  • 2 cans peas
  • 2 - 3 tsp. Parsley

When meat is tender, add the steamed carrots, salt and pepper to taste

(You can add instant potatoes if you like a thicker soup.)

This is an easy vegetable soup. Add anything you like in the way of canned or frozen vegetables.
