- 2 cups potatoes
- 1 Tbsp. shortening or bacon fat
- 1/2 tsp. salt
Slices potatoes very thin. Add potatoes to meat fat in frying pan. Sprinkle with salt. Cover. Cook over medium heat until tender and mealy. Turn occasionally and add more fat as needed during cooking.

My Grandma made potatoes like this at least once a week when I was a little girl. A very simple, happy and memorable dish. Thanks for sharing. :)
