Today's Recipes


Double Chocolate Muffins

Ingredients

  • 2 cup flour
  • 1/2 cup unsweetened cocoa
  • 1 cup sugar
  • 1 Tbsp. baking powder
  • 1 large egg
  • 1 cup milk
  • 1/2 cup melted margarine
  • 1 1/2 cup miniature chocolate chips

Directions

Combine first 4 ingredients. Combine egg milk, margarine. Pour liquid into dry ingredients; add chips. Stir just to mix. Pour into 12 greased muffin cups or paper. Bake at 400 degrees for 20 minutes or until brown.

Kid's Cheeseburger Pie

Ingredients

  • 1 (9-in.) unbaked deep-dish pie shell, (4-cup volume)
  • 1 pound lean ground beef
  • 1/4 teaspoon garlic powder
  • 1/4 cup all-purpose flour
  • 1/3 cup or more chopped dill pickles
  • 1/3 cup dill pickle juice
  • 1/3 cup CARNATION Evaporated Milk
  • 8 ounces American cheese, cut into pieces, divided
  • 1 bottle each mustard and ketchup

Directions

PREHEAT oven to 425°F.

COOK beef and garlic powder in large skillet, stirring frequently, until beef is no longer pink. Sprinkle with flour; stir. Stir in pickles, pickle juice, evaporated milk and half of cheese. Spoon into pie shell.

BAKE for 20 minutes; top with remaining cheese. Bake for 5 minutes or until cheese is melted. Cool on wire rack for 5 minutes. Serve with mustard and ketchup, if desired.

Sausage Bread

Ingredients

  • 1 frozen loaf of unbaked bread
  • 1 lb. sausage or hamburger (cooked and drained)
  • 2 cup mozzarella cheese (shredded)
  • Green peppers and onions (cooked with meat, if desired)
  • Garlic powder

Directions

Split loaf into 2 halves. Roll to desired shape. Sprinkle bread with garlic powder. Mix 1 egg white with cooked meat. Sprinkle with cheese, roll up and seal. Use reserved egg yolk to paint top of bread. Bake in loaf pan at 350 degrees for 30 to 40 minutes.

Strawberry Bread

Strawberry Bread I

Ingredients

  • 3 cup flour
  • 1 tsp. baking soda
  • 2 cup sugar
  • 1 cup vegetable oil
  • 1/2 tsp. salt
  • 1 Tbsp. cinnamon
  • 3 eggs (beaten)
  • 2 cartons sliced frozen strawberries (thawed)

Directions

Preheat oven to 350 degrees. Mix together flour, baking soda, salt, cinnamon and sugar; set aside. Mix together the beaten eggs, oil and strawberries; add to dry ingredients and mix well. Pour into 2 greased and floured 9x5x3 inch loaf pans. Bake at 350 degrees for 1 hour or until toothpick inserted in cake comes out clean. Remove from pans immediately after cool. Makes 2 loaves.

Strawberry Bread II

Ingredients:

  • 3 cups flour
  • 1 tsp. salt
  • 1 tsp. soda
  • 1 tsp. cinnamon
  • 2 cups sugar
  • 1 1/4 cup oil
  • 4 eggs
  • 1 cup nuts (opt.)
  • 2 pkgs. frozen strawberries or 4 cup fresh

Directions:

Beat eggs and oil. Add dry ingredients. Mix together. Add strawberries and nuts. Pour into greased loaf pan. Bake at 350 degrees for about 1 hour. Makes 2 loaf pans.

Mint Brownies

Ingredients

First Layer:

  • 1 lb. can chocolate syrup
  • 1 stick margarine
  • 1 cup sugar
  • 4 eggs
  • 1 cup flour
  • 1/4 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. vanilla

Second Layer:

  • 3 cup powdered sugar
  • 2 Tbsp. milk
  • 1 stick margarine
  • 1 tsp. peppermint flavoring

Third Layer:

  • 1 cup chocolate chips
  • 6 Tbsp. margarine

Mix margarine, sugar and eggs until smooth; add chocolate syrup, flour, baking powder, salt and vanilla. mix well and put in 9x13 inch greased jelly roll pan. Bake at 350 degrees for 20 minutes; let cool. Beat second layer ingredients well and spread on cooled brownies. For third layer, melt chocolate chips and margarine. Let cool, then spread on top of mint layer. Cool 10 minutes, then cut.

Incredibly Easy Low-Fat Chili

Ingredients

  • 1 pkg (approx 1 lb) ground turkey (~7% fat, not 1%)
  • 1 can fat-free refried beans
  • 1 jar salsa, your favorite kind, 12-16 oz

Directions

Brown the turkey. To keep things extra-simple, brown it in a large pot instead of a frying pan.

Drain most of the fat.

Stir in the salsa and the beans.

Simmer on low for 10 minutes.

This recipe doubles or triples well. The only change is to the amount of salsa. Start with one jar, adding more in half-cup increments until you get the right consistency.

Homemade Kool-Aid Popsicles

Kool-Aid Popsicles I

Ingredients

  • 2 cup hot water
  • 1 pkg. unsweetened Cherry kool-aid
  • 1 pkg. Cherry jello
  • 1/2 cup sugar
  • 2 cup cold water

Directions

Dissolve sugar and jello mix in hot water; add kool-aid mix. Mix in cold water. Pour in popsicle molds. Freeze. (can use any flavors of jello and kool-aid you wish.

Kool-Aid Popsicles II

This saves money on store-bought popsicles.

In bowl mix:

  • 1 unsweetened kool-aid packet
  • 1 3-oz. box of jello
  • 1 cup sugar

Add 1 very hot cup of water and mix well.

Put in 2 quart pitcher and add cold water to fill pitcher (or less water if you want sweeter popsicles).

Pour into popsicle molds and freeze.

P.S. For cherry popsicles I buy cherry kool-aid and cherry jello or whatever flavors you want you can do the same thing for.
