Ingredients

  • 1 cup milk
  • 2 eggs, slightly beaten
  • 2 cup buttermilk baking mix
  • 1/4 tsp. ground cinnamon
  • 1/4 cup semi-sweet mini chocolate chips

Directions

In large bowl, combine milk, eggs, baking mix and cinnamon until large lumps disappear. (Batter will be thick.) Lightly grease griddle or large skillet; heat over medium heat. For each pancake, pour 1/4 cup batter onto griddle. Cook until bubbles form and tops look dry. Turn pancakes; cook until golden brown on bottoms. Serve warm with butter and syrup. Makes 10 griddle cakes.

I use the recipe on the baking mix box for waffles, but I use the Mini chocolate chips(they spread more evenly). I lay some out on a cookie sheet, flash freeze for 15 minutes, and then place in a freezer bag.....they heat up perfect in the toaster! My boys love them! I also freeze french toast...but thats another recipe! Thanks!

They sound good, but I can't see where you add the choc. chips.
