Leona's Spanish Rice

Ingredients

  • 1 lb. ground beef
  • 1/2 cup chopped onions
  • 1/4 cup chopped green pepper
  • 1-1/2 tsp. salt
  • 2 tsp. brown sugar
  • 1/4 tsp. black pepper
  • 1 tsp. chili powder
  • 3 cups canned tomatoes
  • 1/2 cup ketchup
  • 1/2 cup uncooked rice

Directions

Brown ground beef and drain. Add the next 6 ingredients. Cook 9 to 10 minutes. Add tomatoes, ketchup, and rice. Cover and let simmer until rice is done.

Serves about 4 to 6

Coffee Ice Cream Pie

Ingredients

  • 18 Oreo cookies (or generic)
  • 1/3 cup melted butter
  • 2 sq. unsweetened chocolate
  • 1/2 cup sugar
  • 1 Tbsp. butter
  • 1 can evaporated milk
  • 1 qt. softened coffee ice cream
  • whipped cream
  • toasted slivered almonds

Directions

Crush cookies and add melted butter. Mix well. Press into 9 inch pie pan and chill. Melt squares of chocolate over hot water and stir in sugar and butter. Slowly add evaporated milk. Stir occasionally until thickened. Chill. Fill pie shell with softened ice cream. Spread chocolate mixture on top. Freeze. When serving pie, top each piece with whipped cream and toasted almonds.

Leftover Mashed Potato Soup

Ingredients

  • Whatever leftover mashed potatoes you have (at least 2 cups)
  • milk
  • chicken broth or vegetable stock (water if you don't have these)
  • stick butter or oleo
  • celery salt
  • shredded cheese to garnish

Directions

In a large pot, mix potatoes with the following ratios. To every two cups of leftover mashed potatoes, add 1/2 cup milk, 1/2 cup broth/stock/juice, 1/2 stick butter/oleo, 1 tsp. celery salt, dash of pepper. Heat through, stirring until creamy. Serve hot with shredded cheese on top.

My kids LOVE this meal. The trick is having leftover mashed potatoes, sometimes that part is hard!

Creole Liver

Ingredients:

  • 4 slices bacon, diced
  • 1/2 green pepper, diced
  • 1 1/2 tsp. salt
  • 1 lb. liver
  • 2 cup tomatoes, chopped

Directions:

Fry bacon until crisp and remove fat. Dredge liver with flour and brown in bacon fat. Add rest of ingredients and bacon. Cover and simmer 45 minutes. Serve with spaghetti.

Quick Hamburger Casserole

Ingredients

  • 2 lb. hamburger
  • 2 cans tomato soup
  • 3 1/2 cups raw noodles
  • 1 small onion

Directions

Brown meat and onion; stir in noodles, soup and 2 soup cans of water. Put in casserole dish and bake 45 minutes in 350 degree F oven.

Scrapple Tip

Slice up the whole package. Wrap each slice in wax paper sheet. (I buy the sheets by the box!)

Put wrapped sheets into a freezer bag or container. Put a frozen slice right onto pan and cook.

No more wasted scrapple that you didn't get to yet that you have to throw away!

Oatmeal for a Healthy Breakfast

Oatmeal is a daily consumption around here. Watching calories is also a trend. If you use the 'quick' oats in the microwave, you will only add about 50 calories to that mix as it cooks by putting 7 little marshmallows on top. The Oatmeal is 150 calories and the marshmallows (7) are 50 calories. Stir it up and mix the melted marshmallows in the oats and it TASTES GREAT. 200 Calorie healthy breakfast.

Beef Stew

Ingredients

  • 2 lb. stew meat
  • 1/2 bag frozen peas
  • 1 lb. sliced carrots
  • 2 small onions, chopped
  • 1 t. salt
  • pepper, to taste
  • 1 can tomato soup
  • 1 can cream of mushroom soup
  • 6 diced potatoes

Directions

Layer vegetables first, then meat, then soup. Bake at 275 degrees F for 5 hours in oven or on low 11 hours or high 5 hours in crock pot.

Pasta Salad

Ingredients:

  • 1 pack 12oz. colored pasta
  • 2 cucumbers
  • 2 tomatoes
  • 6 boiled eggs
  • 1 can black olives
  • cheese (optional)
  • meat (optional chicken or turkey)
  • 1 16oz. ranch dressing
  • thr734174
  • 1 16oz. Italian dressing

Directions:

Mix all the ingredients together. Very easy and simple to make.
