Ingredients

  • 2 eggs
  • 1/2 cup brown sugar
  • 1/2 cup butter or Margarine, melted
  • 1 1/4 cup buttermilk
  • 1 tsp. vanilla extract
  • 1 cup Whole wheat flour
  • Advertisement

  • 1 cup cake flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • Strawberry or Raspberry jam

Directions

Mix eggs, brown sugar, melted butter, buttermilk, and vanilla in large bowl. In medium bowl, combine whole wheat and cake flours, baking powder, baking soda, and salt.combine wet and dry mixtures and fold together just until blended. Spoon into greased muffin tins, filling about 2/3 full. Place 1 tsp. jam on each muffin and press lightly with spoon. Bake at 400 degrees F for 20 minutes. Remove from oven. Remove muffins from pan and cool on rack.

Reading your recipe took me back many years when my mother made something she called "maid of honors" Same recipe as yours. We use to have them in our lunch box. Don't know where she got recipe, or the name.
