Scalloped Potatoes and Ham for a Crowd

Ingredients:

  • 20 lb. cooked potatoes
  • 10 lb. diced ham
White sauce:
  • 1 gallon milk
  • 1 1/2 cups flour
  • 2-3 Tbsp. salt
  • 1 tsp. pepper
  • 1 1/2 sticks margarine
  • 1 lb. Velveeta cheese

Directions:

To make white sauce, melt margarine over low heat in heavy saucepan. Blend in flour and seasonings. Cook over low heat, stirring constantly, until mixture is smooth and bubbly. Remove form heat. Stir in milk. Bring to a boil, stirring constantly until thickened. Then add cheese while sauce is hot and melt. Layer all ingredients into large electric roaster. Mix well. Cook on low for 2 hours. Serves 60-75.
