Ming's Master Cookie Dough

I watched the 'Cooking with Ming' yesterday and was hoping that someone has the recipe for his 'Master Cookie Dough. It looked wonderful, but while I was trying to copy down the ingredients, I missed the amount of butter he used. It was a very versitile basic cookie recipe that can then be used to make sweet and savoury cookies. I'd be grateful for any help.

Trail Mix Granola Bars

Does anyone know how to make a homemade granola bar? The bar I buy at the store has almonds, sunflower seeds, cranberries and whatever. Any ideas? I take these to work; don't want a jar of loose ones.

Walnut Rolls Recipe

We were given at Christmas a tin of delicious somethings... I don't know what they are called but they were small squares of pie crust that was rolled around a filling which had walnuts, I think brown sugar, cinnamon and maybe flour. Does anyone know what they were and do you have a recipe? I would appreciate it.

Recipes Using Cilantro

I just recently found my love for cilantro. I put it in almost everything. What are some of your easy recipes with cilantro? I chop some onion, jalepeno pepper, tomatoes, avocados, and squeeze some lemon on it. So delicious!

What frozen turkey do you like?

I usually buy a frozen turkey for the holidays, both thanksgiving and christmas. I usually buy an off brand. Sometimes they are good, and sometimes not so good. What brand of frozen turkeys do you recommend? I think butterball are overrated.

Peppermint Ice Cream Pie

Once again, I didn't save the recipe because it was soooooo easy, so I don't know who to thank. I used the recipe for peppermint or candy cane pie twice for my holiday gatherings, and twice it was a huge hit. Thank you to whoever sent it in. It was a delicious lifesaver. I used it for our Amish friends gathering. We took them out to see the lights, then I told them that I was serving our traditional Christmas Eve appetizers, where we go to church in the evening, then home to "graze" all night. We had a huge spread of just appetizers: Rumaki, Snausages, barbecued chicken wings, fruit salad, relish and pickle plate, cheese plate with crackers, warm cheese ball, bread bowl with spinach dip inside, munchie chips, dip, and that heavenly pie with punch and coffee! We were the subject of the Amish school the next day, when the students of the one-room schoolhouse had to guess what the teachers had for supper!

On Christmas eve, I was assigned the task of dessert, because I am supposed to be the "Queen of Desserts" in the family, and took the pie to our family gathering. Once again, it was wonderful, and just the right touch.

Thank you to whoever sent that wonderful, extremely easy, dessert recipe. I will use it often.

Ingredients

  • 1 1/2 cups chocolate wafer crumbs
  • 1/4 cup + 2 tbsp butter or margarine, melted
  • 3 tbsp peppermint candy, finely crushed
  • 1 pint peppermint ice cream
  • 8 oz frozen whipped topping (partially thawed)

Directions

Combine crumbs and melted butter. Press into a 9" pie plate.

Combine peppermint ice cream & whipped topping. Spoon into crumb crust. Sprinkle with peppermint candy. Freeze.

Homemade Chicken Or Beef Pot Pie For Two

This recipe comes from my daughter Trisha Currin. She is married with a brand new baby. This is how she saves money when she breaks down and buys one of those fast and easy already cooked chickens.

First, she and her husband make one dinner out of the chicken then she de-bones the rest, adds some mixed vegetables that she always buys in the huge bag at Sam's Club. She then microwaves this for a couple of seconds, just enough to get it warm. Then she freezes it. She buys pie crust in bulk when she finds it on sale. When she needs a fast recipe for dinner, she defrosts her chicken and vegetables and adds one can of cream of chicken soup and puts it her piecrust and bakes according to the instructions on the pie crust. Fast and easy, and she gets two meals out of one chicken. She also does this with beef but adds the gravy to the meat and vegetables and then freezes. I hope this gives someone an easy quick meal this holiday season.

Springy Salad

Ingredients

  • 2 cups applesauce
  • 1 package (regular size) lemon gelatin
  • 1 package (regular size) orange gelatin
  • 1/2 tsp. lemon flavoring
  • 2 cups 7-Up
  • 2-3 fresh oranges, cut in pieces, remove all membranes

Directions

Heat the applesauce until boiling. Add gelatin and mix well to dissolve. Stir in the lemon flavoring. Add the 7-Up and stir well to blend. When mixture just begins to thicken, stir in the pieces of orange. When ready to serve, top with whipped cream.

Sour Cream Biscuits

Ingredients

  • 1 cup thick sour cream, whipped
  • 1/2 tsp. salt
  • 1 2/3 cup flour
  • 1/2 tsp. soda
  • 2 tsp. baking powder
  • (Add 3 Tbsp. sugar when using for shortcake)

Directions

Add the sifted dry ingredients to the whipped sour cream, roll and cut into biscuits. Bake in a hot oven 425 degrees F for 12-15 minutes.

Caramelized Popcorn

This is similar to Fiddle Faddle.

Ingredients

  • 1 tsp vanilla
  • 2 sticks butter
  • 1 1/3 cups sugar
  • 1/2 cup corn syrup
  • 2 quarts (popped) popcorn
  • 1/2 cup peanuts

Directions

Mix first 4 ingredients and cook over low heat until light brown in color. Pour over peanuts and popcorn. Stir to coat and let cool.

Scrambled Eggs Deluxe

Ingredients

  • 4 eggs
  • 1/2 cup cream
  • 4 green onions, minced
  • salt and pepper
  • Dash of Worcestershire sauce
  • 1 Tbsp. butter or margarine
  • 1 package cream cheese

Directions

Put eggs, cream, minced onions, salt, pepper and Worcestershire sauce in a mixing bowl and beat well. Melt butter or margarine in top of a double boiler. Put in egg mixture and cook over boiling water, stirring constantly, until done " easy" . Then crumble the cream cheese into egg mixture folding eggs lightly over it. Serve at once. The secret is not to let the cream cheese melt but just combine lightly with the eggs.)

Molten Chocolate Cake Hot Milk Drink

Ingredients

  • 8 oz. reduced fat chocolate milk
  • 2 Tbsp. chocolate syrup (dark or semi-sweet)
  • Chocolate whipped cream
  • Chocolate shavings or sprinkles

Directions

In a small saucepan, combine milk and syrup over medium-low heat, stirring. Be careful not to let it boil. Pour into glass mug. Top beverage with ready-made chocolate whipping cream or mix 2 Tbsp. cocoa powder into 1 cup regular whipped cream. Sprinkle whipped cream with chocolate shavings or sprinkles.

Cranberry Pinwheels

Ingredients

  • 1/2 cup sugar
  • 1/2 cup crushed pineapple
  • 1/2 tsp. pineapple flavoring
  • 1 cup fresh cranberries
  • 1 Tbsp. cornstarch
  • 2 Tbsp. water
  • 2 cups biscuit mix (like Bisquick)
  • 1 Tbsp. sugar
  • 2/3 cup milk
  • 1 Tbsp. melted butter or margarine

Directions

Combine sugar, pineapple, flavoring and cranberries in saucepan. Cook until berries pop (about 10 minutes). Blend cornstarch with water and stir into hot fruit mixture. Cook until it starts to thicken. Cool. Combine biscuit mixture, sugar, milk and melted butter or margarine. Mix well. Turn onto floured surface and knead lightly. Pat or roll to rectangle, 12x18 inches. Spread with cooled filling. Dot with additional butter and roll up. Cut in slices and place cut side down on greased cookie sheet. Bake 15 minutes in 425 degree oven. Makes 8-12 pinwheels. Nice for Christmas breakfast!

Sandwich Spread

Ingredients:

  • 3/4 cup dill or sweet pickle, chopped
  • 1/2 cup chunk-style peanut butter
  • 1/2 cup chopped celery
  • 1/4 cup salad dressing (Miracle Whip)
  • 1 tsp. soy sauce, opt.
  • Dash of onion salt

Directions:

Combine all the ingredients. Excellent on any kind of bread. Equally good on crackers.
