Today's Recipes


Spaghetti Pie

Ingredients

  • 1 pkg. spaghetti (cooked)
  • 1/3 cup Parmesan cheese (grated)
  • 2 Tbsp. butter
  • 2 eggs (well beaten)
  • 1 lb. ground beef (browned)
  • 1/2 cup onion (chopped)
  • 1 jar spaghetti sauce
  • 1 cup cottage cheese
  • 1 cup mozzarella cheese (shredded)

Directions

Mix first 4 ingredients and place in 10 inch glass pie plate or 9x13 inch cake or casserole pan. Cook hamburger and onion; drain and add sauce. Simmer 15 minutes. Add cottage cheese onto noodles, then add hamburger sauce on top of that. Cook in 350 degree oven for 30 minutes. Top with mozzarella cheese and return to oven until melted. Let stand before cutting. This is a good potluck casserole. Freezes well too.

Lasagna

Ingredients

  • 1 pkg. lasagna noodles
  • 1 lb. ground beef
  • 1 med. onion (chopped)
  • 1 tsp. salt
  • 1/2 tsp. garlic powder
  • 1/4 tsp. pepper
  • 4 cup mozzarella cheese (grated)
  • 1 tsp. oregano
  • 1 Tbsp. minced parsley
  • 1 tsp. basil
  • 1/4 tsp. paprika
  • 2 cans tomato sauce
Directions

Cook noodles. Brown ground beef and onion; drain. Stir into meat, the mixture of all of the seasonings and tomato sauce. Simmer 20 minutes. Arrange in layers in greased 9x13 inch pan, ending with cheese. Bake at 350 degrees for 30 minutes. Let stand 10 minutes before cutting. Serves 6 to 8.

MAMA LYN'S Rub #1

  • 6 tsp. salt
  • 1 tsp. lemon powder
  • 2 1/2 tsp. black pepper
  • 6 tsp. sugar
  • 1 tsp. paprika
  • 1 tsp. cayenne pepper


MAMA LYN'S RUB #2

  • 6 Tbsp salt
  • 6 Tbsp sugar
  • 1 Tbsp dry lemon powder
  • 2 Tbsp cayenne pepper
  • 2 1/2 Tbsp black pepper
  • 2 Tbsp garlic powder
  • 2 Tbsp ground bay leaves
  • 1 Tbsp paprika
  • 2 Tbsp dry mustard


MAMA LYN'S Rub #3

  • 2-1/2 Tablespoons dark brown sugar
  • 2 Tablespoons paprika
  • 2 teaspoons dry mustard
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1-1/2 tsp. dried sweet basil
  • 1 tsp. ground bay leaves
  • 3/4 tsp. ground coriander
  • 3/4 tsp. ground savory
  • 3/4 tsp. dried thyme
  • 3/4 tsp. freshly ground black pepper
  • 3/4 tsp. white pepper
  • 1/8 tsp. ground cumin
  • Salt, to taste


MAMA LYN'S Rub #4

  • 4 TBS Salt
  • 1/2 TBS White Pepper
  • 1 TBS Celery Salt
  • 3 TBS Paprika
  • 2 TBS Black Pepper
  • 1/2 TBS Garlic Powder
  • 2 TBS Cayenne
  • 2 TBS Chili Powder
  • 1 TBS Dry
  • Mustard
  • 1/2 TBS Dried Lemon Peel (Zest)


MAMA LYN'S Rub #5

  • 1/4 Cup Chili Powder
  • 1 TBS Curry Powder
  • 3 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 1 Tsp Dry Mustard
  • 1 Tsp White Pepper
  • 2 Tsp Celery Salt
  • 1 Tsp Oregano
  • 1 Tsp Parsley Flakes


MAMA LYN'S Rub #6

  • 4 Tablespoons ground allspice
  • 1 Tablespoon dried thyme
  • 2 Tablespoon paprika
  • 1 tsp. ground red pepper
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. salt
  • 1/4 tsp. black pepper

Mix all ingredients.


MAMA LYN'S Rub #7

  • 6 tablespoons garlic powder
  • 6 tablespoons onion powder
  • 2 tablespoons allspice
  • 1 tablespoon dried ground chipotle
  • 2 tablespoons Hungarian paprika
  • 2 tablespoons brown sugar
  • 4 1/2 tsp. thyme
  • 4 1/2 tsp. cinnamon
  • 1 1/2 tsp. nutmeg
  • 1/2 tsp. ground habanera
  • 2 lemons peel ( powdered)

In a bowl combine all ingredients.


MAMA LYN'S Rub #8

  • 1/4 Cup Chili Powder
  • 1 Tsp Onion Powder
  • 1 TBS Curry Powder
  • 1 Tsp Garlic Powder
  • 1 Tsp Dry Mustard
  • 1 Tsp White Pepper
  • 1 Tsp Oregano
  • 2 Tsp Celery Salt
  • 1 Tsp Parsley Flakes


MAMA LYN'S Rub #9

  • 2 1/2 Tablespoons of Dark Brown Sugar
  • 2 Tablespoons of Paprika
  • 2 Teaspoons of Dry Mustard
  • 2 Teaspoons of Onion Powder
  • 2 Teaspoons of Garlic Powder
  • 1 1/2 Teaspoons of Dried Sweet Basil
  • 1 1/2 Teaspoons of Course Ground Black Pepper
  • 1 Teaspoon of Dried Bay Leaves
  • 3/4 Teaspoon of Ground Coriander
  • 3/4 Teaspoon of Ground Savory
  • 3/4 Teaspoon of Dried Thyme
  • 1/2 Teaspoon of White Pepper
  • 1/8 Teaspoon of Ground Cumin
  • 1 Teaspoon Cayenne Pepper
  • 1/2 Teaspoon ground cloves
  • 1 Teaspoon Adobo
  • 1 Tablespoon of Pickling spices ( powdered)
  • 1/2 tsp. Salt

Place all the above into a blender and mix well.


MAMA LYN'S Rub #10

  • 4 tbsp. chopped fresh rosemary
  • 2 tsp. salt
  • 1/4 tsp. cayenne
  • 1 tsp. dry mustard
  • 1 tsp. dried oregano
  • 3 tsp. garlic powder
  • 2 tbsp. black peppercorns
  • 2 tbsp. white peppercorns
  • 1 tbsp. pink peppercorns


MAMA LYN'S Rub #11

  • 5 cups dark brown sugar
  • 4 cups paprika
  • 1 2/3 cups garlic powder
  • 1 2/3 cups onion powder
  • 1 2/3 cups dry mustard
  • 1 1/3 cups dried sweet basil
  • 3/4 cup ground bay leaves
  • 2/3 cup ground coriander
  • 2/3 cup ground savory
  • 2/3 cup dried thyme
  • 2/3 cup ground black pepper
  • 2/3 cup ground white pepper
  • 4 tablespoons ground cumin
  • 5 cups seasoning salt

Laziest Lasagna

Quick and easy Lasagna recipe.

Ingredients:

  • 1 jar/can spaghetti sauce
  • 1 small tub cottage cheese
  • 3/4 cup shredded mozzarella
  • small package egg noodles
  • 1 lb. ground beef (optional)

Directions:

Brown ground beef and add the spaghetti sauce, stir in cottage cheese and half of the mozzarella. Fill cottage cheese tub with water and add it to the mixture. Fold in noodles, pour into casseroles. Bake uncovered at 375F for 20 minutes or until bubbly. Yield 8 servings.

Easy Lasagna

Ingredients

  • 1 1/2 lbs. ground beef
  • 2 Tbsp. instant onion (chopped)
  • 1/4 tsp. garlic powder
  • 1 can tomato juice
  • 1 can tomato paste
  • 1 Tbsp. worcestershire sauce
  • 1 tsp. oregano
  • 1 Tbsp. parsley flakes
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 pkg. lasagna noodles (uncooked)
  • 1/2 cup Parmesan and Romano cheese (grated)
  • 1 lb mozzarella cheese (shredded)

Directions

Brown meat and drain. Stir in tomato juice, onion, garlic, tomato paste, Worcestershire sauce, oregano, parsley, salt and pepper. Simmer 20 minutes, stirring occasionally. Lightly grease 9x13 inch pan. Layer 1/2 of uncooked noodles, sauce and cheese. Repeat layering. Top with parsley, cover with foil and bake for 30 minutes at 350 degrees. Let stand 20 minutes before cutting.

Ground Turkey Recipes

Our family has recently made the switch from ground beef to ground turkey. With ground beef more than $2 a pound, we had basically quit eating hamburger for quite some time. On a recent trip to the grocery store I noticed that ground turkey was HALF the price of ground beef, about $1 a pound. I decided to give it a try, and our family loved the ground turkey. Honestly, you can't even tell the difference in taste, and it is very low fat. There is almost no fat to remove from your pan. Here are some recipes our family adapted to our tastes:

Turkey Chili

  • 1 tbsp. vegetable oil
  • 1 medium onion, chopped
  • 1 medium red bell pepper, chopped
  • 2 celery stalks, thinly sliced
  • 1 lb. ground turkey
  • 4 cloves of garlic, minced
  • 1-2 tbsp. chili powder
  • 1 28-oz. can of crushed tomatoes
  • 1 15-oz. can of black beans, drained
  • 1 tsp. dried oregano
  • 1 can corn (optional)

In a large soup pan, cook onion, pepper, celery, and turkey in oil until turkey is cooked through. Add garlic and cook 1 minute. Add tomatoes, beans, and oregano, and stir well. Bring to a boil, reduce heat and simmer partially covered for 20 minutes, stirring occasionally. Add corn and simmer for 10 more minutes. Serves 6.

Turkey Lasagna

  • 1 tbsp. vegetable oil
  • 1 lb. ground turkey
  • 1 clove garlic, chopped
  • 1 cup onions, chopped
  • 1 (14 1/2-oz.) can tomatoes, chopped, reserve liquid
  • 1 (6-oz.) can tomato paste
  • 2 1/2 tsp. Italian seasoning
  • 8 uncooked lasagna noodles
  • 1 (12-oz.) carton cottage or Ricotta cheese
  • 3 cups mozzarella cheese, shredded

In a large skillet, cook onion, garlic, and turkey in oil until turkey is cooked through. Add tomatoes with liquid, tomato paste, and Italian seasoning. Bring to a boil, reduce heat and simmer for 20 minutes, stirring occasionally.

Cook lasagna noodles according to directions on package.

Lightly grease 13x9x2-inch baking dish. Spoon 1/3 sauce in the bottom of the baking dish. Top with 4 lasagna noodles. Spoon cottage or Ricotta cheese over noodles. Sprinkle 2 cups mozzarella cheese on top of cottage cheese. Spoon 1/3 sauce over cheese, top with remaining noodles, and then spoon remaining sauce over noodles. Top with remaining mozzarella cheese. Bake at 350 degrees for 30 to 40 minutes. Serves 8.

Turkey Burgers

  • 1 lb. fresh ground turkey
  • 1/2 cup fresh bread crumbs
  • 1/2 cup onion finely chopped
  • 1/4 cup ketchup
  • 1/2 lemon, juice of
  • 1 tsp. Worcestershire sauce
  • 1 tsp. soy sauce

Combine turkey, bread crumbs, and onion in a large mixing bowl. In another bowl, stir together remaining ingredients. Using hands, work sauce into turkey mixture. Form into 6 patties and fry or grill. Serves 6.

Crunchy Trail Mix

Ingredients

  • 1-16 oz. pkg. plain M&Ms
  • 1-10 oz. pkg. peanut butter baking chips
  • 1-3 oz. can chow mein noodles
  • 1 1/2 cups raisins
  • 1 1/4 cups peanuts

Directions

In a large bowl, mix all ingredients well. Store in an airtight container. Makes: 8 cups.

Choco-Pretzel Rings

Ingredients

  • 48-50 Pretzel Rings
  • 1-8 oz. pkg. Milk Chocolate Kisses
  • 1/4 cup plain M&Ms

Directions

Place pretzels on greased baking sheets in a single layer. Place chocolate kisses in center of each ring. Bake at 275 degrees F. for 2-3 minutes until chocolate is softened. Remove from oven. Place a M&M on each, pressing down slightly so chocolate fills the pretzel ring. Store at room temperature. Makes: 4 dozen.

You can use the color of M&M's specifically for a holiday, say, red and green for Christmas, red for Valentines Day, etc.

Plantation Supper

Ingredients

  • 1 lb. ground beef
  • 1 lb can cream style corn
  • 1 pkg. egg noodles (cooked)
  • salt and pepper to taste
  • 1 pkg. cream cheese
  • 1/2 cup onion (chopped)
  • 3/4 cup milk
  • 1 can cream of mushroom soup

Directions

Brown and drain ground beef and onion. Add remaining ingredients and cook until heated through.
