Light Banana Bread

The best and easiest and lightest banana bread.

Ingredients:

  • 1/3 cup vegetable oil
  • 1 1/2 cup mashed bananas
  • 1/2 tsp. of vanilla
  • 3 eggs
  • 2 1/3 cups Bisquick
  • 1/2 cup chopped nuts (optional)
  • 1 cup sugar

Directions:

Mix altogether in one pan and put into 4 small greased loaf pans. Or two large. Cook on 350 or approx. 25 minutes for small and 40 for large.

I altered this recipe as follows

1/3 cup vegetable oil
2 cups mashed bananas
1 tsp vanilla
3 eggs
2 2/3 cups Bisquick
1/2 cup chopped nuts (optional)
1/2 cup Splenda Sugar Blend.

I put them in paper cups in my muffin tins and baked for about 30 minutes. They were delicious. Very light with a good banana flavor. Easy and quick to make. I will do them often.

This is the recipe I have always used. It's quick and never comes out gooey. I also don't measure my bananas, I use what I have.
