Lentil and Italian Sausage Stew
- 1 1/2 lb. hot Italian sausage
- 1 lb. carrots
- 4-5 stalks celery
- 1 green pepper
- 1 med. onion
- 1 large can chicken broth
- 2-3 cups water
- 1 1/2 cups lentils
Cook sausage in soup kettle until brown, drain most fat. Grind together carrots, celery, pepper, and onion in food processor, or chop finely. Add to pan. Add broth. water, and lentils. Cook until lentils are soft, about 45 minutes. Mash lentils with potato masher or add in batches to process until desired consistency. Cook until creamy and yummy. All amounts and most ingredients can be varied, salt and pepper optional!
