Spicy Mexican Meatloaf

Ingredients
  • 2 lbs. ground chuck
  • 2/3 cup salsa
  • 1 package of dry taco seasoning (or 4 Tbsp. of the homemade from one of the recipes submitted)
  • 2 cups corn chips crushed (I use my mini-chopper)
  • 2 large eggs lightly beaten
  • 1 cup shredded cheese (monterey jack or cheddar).

Directions

Mix all ingredients in a large bowl and shape into loaf. Bake at 350 degrees F until done (approximately 1 hour). I also like to make these into hamburger patties and put on the grill. Nice change.
