Spicy Mexican Meatloaf
- 2 lbs. ground chuck
- 2/3 cup salsa
- 1 package of dry taco seasoning (or 4 Tbsp. of the homemade from one of the recipes submitted)
- 2 cups corn chips crushed (I use my mini-chopper)
- 2 large eggs lightly beaten
- 1 cup shredded cheese (monterey jack or cheddar).
Mix all ingredients in a large bowl and shape into loaf. Bake at 350 degrees F until done (approximately 1 hour). I also like to make these into hamburger patties and put on the grill. Nice change.
