Today's Recipes


Vegetable Salad

Salad

Ingredients

  • 1 large head lettuce
  • 1 small head cauliflower, chopped
  • 1 small onion, chopped
  • 1 lb. fried bacon, crumbled
  • 1 1/2 cups shredded cheese

Directions

Layer ingredients in order given except cheese. Put dressing on top. Spread evenly. Sprinkle shredded cheese on top. Put in Tupperware and seal to use the next day. Before serving, toss salad. Do not wash veggies as it makes salad wilt.

Dressing

Ingredients

  • 1 1/2 cups salad dressing
  • 1/3 cup Parmesan cheese
  • 1/4 cup sugar

Directions

Mix together. Put on salad.

Tea Party Sandwiches

Here are some recipes to get you started on your tea party menu. These are my recipes that I use all the time for my teas. I hope you enjoy.

Tomato Cream Cheese Tea Sandwich

It is very tasty with tomatoes from your garden.

Ingredients

  • 3 ripe tomatoes
  • Whipped Garden Herb Cream Cheese, softened
  • 8 slices thin white bread

Directions

Spread cream cheese thinly on bread slices. Slice tomatoes very thin and blot with paper towels. Lay tomato slices on bread and top with bread. Remove crusts and cut into squares or triangles.

Cucumber Tea Sandwiches

Ingredients

  • 2 medium cucumbers, peeled, sliced thin
  • 1 cup white vinegar
  • 1 Tbsp. sugar salt and pepper
  • 8 slices of thin white bread
  • Miracle Whip mayonnaise
  • Whipped softened Cream Cheese

Directions

Marinate the cucumber slices in the vinegar, sugar, salt and pepper for at least an hour. Drain well. Lightly spread mayonnaise and cream cheese on bread slices. Layer the cucumber slices thinly on bread. Top with other bread slice and cut off all crusts. Cut sandwiches in squares or triangles.

Cheddar-Walnut Tea Sandwiches

Ingredients

  • 1/2 cup shredded cheddar cheese
  • 1/2 or a 3 ounce package cream cheese, softened
  • 1-1/2 tsp. chopped onion
  • 1/2 tsp. Worcestershire sauce
  • 2 Tbsp. finely chopped walnuts
  • dash of red pepper
  • 1 Tbsp. mayonnaise
  • 2 dozen white or whole wheat bread slices
  • paprika

Directions

Combine all ingredients except bread and paprika. Spread about 1 Tbsp. of mixture on bread. Top with a second slice of bread. Cut off crust and cut sandwiches into triangles.

Spiral Tea Sandwiches

Ingredients

  • 2 ounces cream cheese
  • 1 scallion, trimmed and thinly sliced
  • 1 small cucumber, peeled, seeded, and roughly chopped
  • 1 Tbsp. chopped dill
  • 4 slices whole-wheat bread
  • 8 thin slices smoked turkey
  • 1 roasted red pepper, cut into thin strips

Directions

Combine the cream cheese, scallion, cucumber, and dill in a food processor. Process into a chunky paste. Set aside. Use a rolling pin to flatten the bread. Use a butter knife to spread the cream cheese mix over the bread. Then cover each slice with two slices of turkey and a little red pepper. Roll each slice of bread into a jelly roll shape. Press the roll together and wrap with plastic wrap. Refrigerate until ready to serve.

Creamy Chicken Salad

Ingredients

  • 2 cups cubed, cooked chicken breast
  • 1 cup cooked small pasta
  • 1 cup halved seedless red grapes
  • 1 cup mandarin oranges, drained
  • 3 celery ribs, chopped
  • 1/2 cup sliced almonds, (opt.)
  • 1 Tbsp. grated onion
  • 1 cup mayonnaise
  • 1 cup whipped topping
  • 1/2 tsp. salt

Directions

Mix all ingredients except mayonnaise, whipped topping and salt. In another bowl, mix rest of ingredients and pour over chicken mixture. Stir to cool.

Rhubarb Cake Dessert

Crumble together:

  • 1 cup butter
  • 1 cup brown sugar
  • 2 cups flour
Press into a pan a little bigger than 9x13 inch.

Mix together:

  • 6 egg yolks
  • 2 cups sugar
  • 3/4 cup flour
  • 1/4 tsp. salt
  • 1 cup sweet cream
  • 5 cups rhubarb, finely shredded
Spread on top of crumb mixture. Bake at 350 degrees F for 40-45 minutes (just until custard is almost set). Take out of oven and top with meringue. Put back in oven on top shelf for approximately 20 minutes or until browned.

Meringue Ingredients

  • 6 egg whites, stiffly beaten
  • 1 cup sugar
  • pinch of salt
  • 2 Tbsp. vanilla

Coated Grapes

Ingredients

  • 1 package cream cheese
  • 1 cup powdered sugar
  • 1 cup sour cream
  • 2 tsp. vanilla
  • 2 lb. grapes (red or green)

Directions

Mix cream cheese and powdered sugar. Mix with sour cream and vanilla. Pour over grapes.

Delicious Custard

Ingredients

  • 1/2 gal. milk
  • 1 dozen eggs, beaten
  • 1 Tbsp. (heaping) flour
  • 1/2 tsp. salt
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 tsp. vanilla

Directions

Heat milk until bubbly. Beat eggs and add rest of ingredients. Add mixture to hot milk. Pour into a stainless steel cake pan. Bake at 475 degrees F for 3 minutes. Turn off oven. Leave in oven until cool, then chill and enjoy!

Potato Salad

Ingredients

  • 12 cups cooked and shredded potatoes
  • 12 hard-boiled eggs, diced
  • 1 1/2 cups chopped celery
  • 1/2 cup chopped onion

Dressing Ingredients

  • 3 cups salad dressing
  • 2 cups sugar
  • 3 Tbsp. mustard
  • 1/4 cup vinegar
  • 4 tsp. salt
  • 1/2 cup milk

Directions

Mix dressing ingredients and pour over potatoes, eggs, celery and onions. Let stand overnight to blend.

Yield: 1 gallon.

Hot Taco Salad

Taco Salad

Ingredients

  • 1 head lettuce
  • 1 onion
  • 4 tomatoes
  • 1 package shredded cheese
  • 8 oz. Thousand Island dressing
  • 2 lb. hamburger
  • 1 can kidney beans (or pork & beans)
  • 1/4 tsp. salt
  • 2 Tbsp. hot sauce
  • 1 package taco flavored corn chips

Directions

Cook hamburger and onion. Then drain. Add cheese, dressing, hot sauce and kidney beans. Simmer a little. Chop lettuce and tomatoes. Topped with sour cream is good. A delicious meal.

Thousand Island Dressing

Ingredients

  • 2 cups salad dressing
  • 1/4 cup relish
  • 2 Tbsp. ketchup
  • onion, finely chopped

Directions

Mix together. You can use this for your dressing in the above Taco Salad
