Quick and easy. Especially good this time of year with homegrown garden tomatoes and fresh basil.
- 3 or 4 large garden tomatoes
- 1 package shredded or 8 to 10 slices mozzarella cheese
- 1/3 cup olive oil
- 1/4 tsp. seasoned salt
- ground pepper
- fresh or ground basil
Slice tomatoes and sprinkle shredded or a slice of mozzarella cheese on each tomato slice. Combine oil, salt, and pepper. Drizzle over tomato and cheese. Sprinkle with basil. Either place under broiler until cheese has melted or serve cold.
