This about frying potatoes only. There was an article about the harm of things fried in high temp fat in the Oregonian a couple of years back so a dietition went to work on finding a good way to fry potatoes, and I've done it many times and it works.
You take a cold cast iron pan, put in about 1/2 inch oil or a bit less, and fresh, cold, towel wiped potatoes, sliced as you like them put it on a burner and turn it on to medium only.Put the potatoes in the cold oil. Let them fry until as brown as you like. Turn and repeat.
The absorb hardly any fat at all, never get too hot, which is when the fat and starches in the potatoes make an unhealthy chemical, and come out lovely. Season and salt in the manner you suggested or however you prefer. The dietitian measured the oil before and after a batch and she'd only used 1 Tablespoon of oil.

Great Idea although I will just spray the 'fries' with oil and sprinkle then bake em. But O yumm.
